We bought some Thai peanut simmering sauce, marinated chicken thighs in it overnight and baked it. I'm going to pull the chicken off the bone and make a ramen noodle salad and add the chicken (it's a cold dish) for us to eat this week!

I tried a new dish, Tamarind and Honey Prawns with Udon Noodles.
The recipe called for 1/3 cup of tamarind concentrate but I only had puree so I used that instead. The dish was really tangy - almost too tart - so I can only imagine what it would have been like if I had used paste or concentrate instead of the puree. As it was DSO couldn't eat it. He just picked out the prawns to eat!

A dear friend brought her fabulous and delicious chili over for dinner. Best served with fritos sour cream, green onions, and cheese......it is SO good. DD made brownies, and I made an apple crumble for dessert. All in all we had great food and great fellowship!

DH grilled teriyaki chicken w/homemade sauce and sauteed spinach. There was also steamed rice. It smelled and looked so good that I was getting almost poutyfaced at not being able to taste it.

I was gone most of the day, but there was some frittata with bacon, potatoes, veggies, and cheese here, and I ate that when I got back. Delish!
