Tonight I'm going to make chicken tenders, rice and peas. Each of the four food groups are properly represented. I brown the chicken in olive oil first. What's on your menu? Have a great Tuesday everyone.

Tonight DD has to be at work at 4:30, DH has to coach baseball practice at 6:00 and DS to umpire also at 6:00 so I made a lasagna a couple of weeks ago and froze it. I would like to say we would be having salad and garlic bread with it but it is such a rush lasagna alone will have to do.

Well, MIL really enjoyed my enchilada's last night My Polish SIL is an excellent cook and MIL lived with BIL and SIL for a couple of months so for her to enjoy my food is a boost to my ego Tonight dh and I will eat the leftover enchiladas before we go to Costco ... The dd's will once again have to fend for themselves ... they are old enough now to manage a few times per week

Soccer practice tonite & for DD I drive carpool.
Just got an email that with school ID I can get a free Chick Fil A sandwich today for Teacher Appreciation. So I think DD & I will have CFA. There is a leftover pork chop, noodles, etc from last night. DH loves leftovers so he's all set.

I think I mentioned on this thread that I've been eating vegetarian for the last month, with the idea that it was a "one month, see how I do" type of thing. Well, the month ended Saturday and I did great. Surprisingly to me, it was almost effortless for me to eat vegetarian. And, the craziest thing is that DH and DS didn't even know that I was doing it! I made mostly meatless meals for everyone during the month, but a few times, I made something and then added chicken or another meat into theirs just before serving.
So, I'm now trying to decide if I am going to keep eating this way. I started this primarily for health reasons, and the one-month thing was something I had challenged myself to do. So I guess until I make my decision, I'm going to keep doing meatless stuff, or at least things that are easily adaptable.
All that being said, I'm thinking that I'll make baked macaroni and cheese tonight, probably with steamed carrots on the side.

I'm doctoring up some jarred spaghetti sauce and will serve it with pasta, roasted green beans and two other vegetables yet to be determined, pineapple and cantaloupe chunks, bread sticks, and things got busy last night and no one had any of the cake, so it's available tonight.

So I made chili rice with my ground beef last night, but first I partly fried one burger patty and set it aside for tonight. Then I took my one remaining good hamburger bun out of the freezer. So tonight I will finish cooking the burger, add cheese, and enjoy a cheeseburger for dinner. (Not a mushroom burger, as I still have no mushrooms!) Plus broccoli. Lots of broccoli. I didn't eat any veggies at all last night.

I'm thinking salmon and some green beans. I finally found a canned green bean we really like. I can't remember who makes them, but they are "southern" style which means they really don't taste like green beans and probably aren't good for us. It will hold us over till summer when I can cook/serve fresh green beans.

I don't know. The chicken that I made last night was pretty good. I might just boil some pasta, toss in the chicken and some broccoli, add some garlic, parm and mozzarella and call it good.
Or maybe breakfast for dinner. That's always a hit as well.

We have 2 avocados that ripened more quickly than expected so they are getting used tonight. Cilantro lime chicken and rice with black beans and avocado We have started pinning recipes we like to a "this was yummy" Pinterest board so when I go back to work we have a good selection of things we know we like. I do so much better when I have a menu and recipes to choose from rather than just having food and trying two figure it out each night. I am just not that creative, lol. eta: this was a stinker recipe. The rice was perfect (cooked in my instant pot), the avocado perfectly ripened, but the chicken was blah and flavorless considering the time it took to sauté and the ingredients. I started it stovetop and finished it off in the oven. Definitely won't be making that again!

I have no clue. The boy will be home tonight so an actual dinner will need to be made...but what that will be is currently unknown. Although, I am feeling so very guilty for making mac/cheese without him, so maybe I will do that. I have some ground turkey that I could use and make a hamburger cheese mac thing. He would like that I think. But I totally reserve the right to change my mind.

After so many years of cooking every. single. night. my brain is fried to the point that I can't even remember all the dishes over the years that we ate. My menu has shrank to the point of about two meals that I feel like I make over and over and over and over... So, what should make?

Chicken thighs with cherry tomatoes and a chicken broth-based sauce with onions and garlic and Worcestershire. Broccoli. Small potatoes fried in olive oil. And I just took choco chip cookies out of the oven. Gosh - we all eat well on this thread. I would also like someone to tell me what to fix and how to fix it. And then come over to actually fix it.

Today was our Walmart day - DH picked up a roast beef and cheddar sandwich (he added beef consommé and had the French Dip sandwich he has been wanting for days. I was so tired from Walmart that I grazed - Triscuit with cheese, grape tomatoes and radishes. I'm happy!!!! He's asleep now.
