You can make the eggs, etc., special. Like a spinach and feta omelette or a frittata. You could do a Greek yogurt and berry parfait. Fresh flowers in a vase. Done.

My breakfast when I go out is an omelet with bacon and cheese, or broccoli and cheese. I second the flowers in the vase. You don't need the waffles or cinnamon buns to make it special. She will love it, because you both are doing it.

I did South Beach a long time ago and there was a "dessert" that was made with ricotta cheese and almonds and was a mousse-type dessert. It was yummy! Is ricotta compliant with Atkins? There are lots of ricotta desserts recipes on the internet if you are interested.
I just completed the Whole 30 and the best gift anybody could have given me was to plan and make me a Whole 30 compliant meal. I think you and your granddaughter are very thoughtful and Mom is going to love whatever you make her!

You could do a crustless quiche and have strawberries with real whipped cream on the side.

I made a quiche type pie once and use sausage for the crust, just bake the crust first partially, and then add the egg mixture and finish. I don't remember if I had a recipe, or was just winging it myself...lol.
