Hey everyone, Dd#2 is cattle penning again with Grandma this weekend so she won't be here for dinner and I've been cooking all week so I'm hoping to just grab takeout for dh, dd#1 and me ... maybe poutine or burritos What's on your menu tonight? ETA: I'm also going to see the ballet tonight ... Love Lies Bleeding which is based on Elton John ... it's sooooo good so I'm really looking forward to it Of course there will be wine

I am on my own for dinner tonight and decided that I was going to eat an early dinner (late lunch) today. I have a have couple of chicken breasts baking right now, and am planning on making some mashed potatoes later. Some kind of vegetable will round the whole thing out. I am making enough that I can plate enough for leftovers for tomorrow.
My boy is off with his dad car hunting. His car now is a lease that his dad took out on a car for both boys to drive and since the lease is up, his dad is thinking of buying him a used car to take to college. I am not sure if he is planning on coming home tonight or not, but definitely know that he won't be here for dinner.

I have no idea. We had to go buy a dishwasher this am, because ours died yesterday. For some reason it zapped my energy. So, I'm gonna lobby for pizza.

Since it's take out night here, I went grocery shopping this morning and have spent the day prepping stuff for the week. I know all the prep will make upcoming meals easier, but ugh, I really don't feel like doing it today. *sigh* leannec, enjoy the ballet! scrapmaven, sorry to hear about your dishwasher. There must be something about appliance shopping, because it wears me out too.

I ended up finishing off the Mexican food last night, but I did get my chicken carcass into the crockpot. So tonight will be chicken soup of some sort. I also need to put together some kind of frittata tonight that I can bake in the AM to take for brunch tomorrow at DS and his girlfriend's house. I remembered at the last minute that she doesn't eat pork, so I had to run to the store for turkey sausage crumbles. At least they were on sale. leannec, I would love to be going to the ballet tonight and drinking wine!

Smoked salmon, zucchini and garlic (and less than five minutes in the skillet) and pasta. Quick and easy, which is a good thing, since DD will celebrate her birthday tomorrow, so I have spent hours baking, making cute fondant figures for the cake (including Olaf) and cleaning.

Think we are going to have Ruebens. Don't know what to have with them because everything I usually have with them I can't have before my med test. Drats. Can't have ruebens either so I'll just do them with the meat and cheese.
I can't wait until Tuesday gets here. I want my food.
And no wine to make me feel better about no food.

We went to a graduation party today where they had a great taco bar. I won't be too hungry this evening, so it will be a fend for yourself evening if/when DH wants to eat this evening.

DD, SIL and their best friends will be here shortly. DD & SIL are coming from out of state. They requested grilled burgers (I will eat a portobello burger), grilled corn on the cob and chocolate dipped strawberries. I also made a Greek layered dip (pita chips, pepper strips, sliced cucumbers and baby carrots for dipping), broccoli apple salad with lemony Greek Yogurt Dressing and Greek Yogurt Lemon bars and lemon meltaway cookies. (Dinner for low sodium, low fat, diabetic and paleo!!!) Hopefully everyone will find something to eat.

Today I made: Korean Roast Chicken Thighs Balsamic Chicken Thighs Crock Pot Thai Chicken Thighs
Yea, I cook on Saturdays and then freeze it into mini meals.
All 3 of these recipes from Food.com were quite good. The Balsamic Chicken taste most excellent with scallop potatoes and a creamy salad dressing on greens. That Balsamic vinegar needs cream/fat on the tongue to taste perfect. This goes really well with rice also.
The Thai Chicken - I used the ingredients she listed, but didn't follow her recipe. I was hesitant about mixing peanut butter with a jarred salsa... but it was quite good. I would have never thought to mix those two ingredients together.

DH, DS and I are going out for dinner for Mother's Day. We're going to a new restaurant in town that has an English chef and specializes in sort of "elevated" English pub food, English beers and gin drinks.

I'm sick  but the tooth fairy comes tonight! I've got a very excited 6 year old! Dinner... Hmmm, I'm not sure. I don't want to deal with it, but I've got kids that need to eat. Probably breakfast burritos and fruit on the side.

I am going to my first band event of the year - the awards ceremony. So today, my son informs me that I "could" have been coming to all of his band competitions, etc., for months. How on earth did I miss this? What kind of terrible band mom am I?  I will know better for next year. At first, he told me that the food at the awards ceremony was not that great. Then he said that it was decent. So I guess we'll see. Ds' dad is coming as well. DS2 is happy because he will be "alone." I will feed him some type of fast food before I go. Lisa

We just left a college graduation party for a niece who received her second degree (in nursing). It was in southern Maine and the menu included lobster rolls, clam chowder, pulled pork, and bbq chicken legs along with salads. It was delicious! I have popcorn on my mind and may have some later if I'm hungry.

Saturday night means it's eating out night for us  Still undecided as to where, dh just suggested a local Greek place that we've not been to before. I really don't care. As of right now I don't have a taste for anything in particular.

Tonight is our Mother's Day celebration meal due to schedules. I have all four of my sons under my roof for Mother's Day for the first time in five years. Plus my mama and my husband. Tonight is surf and turf -- ribeyes and crab legs! Plus mac & cheese, baked potatoes, and collard greens. A weird menu I know, but I tried to accommodate everyone's favorites. Desserts are cheesecake, chocolate crunch pie, and salted caramel oreo icebox dessert. We are toasting with Ginja from Portugal served in dark chocolate cups -- courtesy of the Navy boy who just returned from deployment. I am one happy mama tonight!
Tomorrow, we will do a fancy brunch because two have to be on the road early. So up early for Mimosas while we cook brunch together! Did I say I'm happy to have them all here?!? Lol.

We went out for Vietnamese: salt and pepper squid, honey chicken (ok that's more "Aussie Chinese" than Vietnamese, but whatever!), soft shell crab, fried rice. Delicious but I ate too much.

It's 80+ here but I was craving grilled cheese and soup. So sourdough with fig jam, Brie, and prociutto with rosemary sprinkled in the buttered sides. Butternut squash soup. Was perfect and hit the spot.
