Today is a beyond busy Monday. I'm picking up my sil who is flying in for graduation, in addition to running to my regular Monday appts. I think we might do Chinese take-out unless I have time to make my chicken piccata pasta toss. Too bad I can't eat my Wheaties, because it's going to be a very busy few days.
What's on our menu?

Chinese take out sounds delicious!! Good luck with your busy Monday!! Dinner tonight is easy - ham steaks, oven roasted cabbage tossed with EVOO, salt, pepper & bacon, steamed cauliflower with cheese sauce. I need to make some sugar cookie dough and get it in the freezer. My dd's graduation celebration (from 5th grade) is a week from tomorrow and I said I'd make brownies and sugar cookies. I'll make the dough, scoop it out into balls and freeze them so all I have to do is plop them on a cookie sheet and bake next Monday!!

Spaghetti and a meat sauce here, and icecream for dessert. Busy day (spent most of it in court), so we needed something that was quick and easy to make. Tomorrow is NOT a busy day, but I'm already planning on spaghetti carbonara (because I found bacon in the freezer. Must.empty.freezer!)

BF brought up a pork loin to thaw. We'll have grilled chops, I think, and grilled veggies. Unseasonably warm here, but I love eating outside. I'll have to find the table umbrella.
I'd love some ideas on what veggies grill well. I've got a basket to put on the grill, and will probably use peppers, onions and maybe a handful of grape tomatoes.

I have some chicken leftover from Saturday's grilling, so it's chicken sandwiches with bacon, lettuce and tomato. I picked up some corn on the cob at the farmer's market, so that will be our side.

My freezer is doing some of the work for me today. Three cheers for the freezer. And four cheers for me for cooking ahead and stocking it. We're having Mississippi pot roast, rice, roasted green beans, cauliflower, and carrots, cantaloupe and blueberries. In the unlikely event that I feel ambitious, we will have some sort of bread/roll item. There's a lot of the epic-fail strawberry pie leftover from yesterday for dessert. There's most of a Costco chicken in my fridge, so I'm gonna go out on a limb and say, something with chicken. Also, there are a couple of jars of Trader Joe's yellow curry sauce in my pantry I've been meaning to use, so maybe tonight's the night. Plus rice and maybe broccoli and carrots? I'm making MORE baked goodies at the end of next week. Our soccer club is having their annual banquet and my BFF is running it and asked me to make some desserts that can be easily eaten with fingers and napkins. So I'm making a bunch of cookies. Probably triple chocolate chip and more sugar cookies.

I am trying to make a few meatless meals each week so tonight is lasagne rollups. I have ricotta I need to use and half a box of lasagne noodles. I don't know why I only have half a box, but that will be used tonight,

I tried 2 new recipes in the crock pots yesterday, one was beef tacos and the other Mexican corn casserole. Both turned out!! We have leftovers of both, so that will be dinner tonight. This Saturday we are having an open house/house warming party. All meals this week have to be quick. I have to still do some cooking for the party and lots of cleaning and organizing to do. We did clean out the basement and garage this weekend. Feeling accomplished.

I'm guessing it will be leftovers. We've had a whirlwind day. My parents are here house hunting and I prepared myself for a long day of looking at houses. Instead they fell in love with the second house they saw, put in an offer, and are doing the paperwork right now. It happened just that quickly. Back to dinner...I still have fruit salad and quiche left from last night. Sounds simple at the end of a busy day.

I have leftover brown rice, leftover chicken breasts, and a bunch of fresh veggies in the fridge, so I'm going to make chicken fried rice. I may make biscuits or something to go along with the rice.

After a relaxing weekend of absolutely no cooking it's back to the grind for me ... sigh! Tonight I'm making "Easy Lemon Chicken" which is essentially chicken piccata in a cream sauce ... I'll serve it over noodles ... I might make a small tossed salad as well

Leftovers - roast, potatoes, carrots and gravy. We also have leftover cornbread. We will add some veggies from the garden - tomatoes and radishes and store bought cucumber.

Back home after a weekend out. I think I'll just stick a frozen pizza in the oven. I'll doctor it up, but I have to get to the grocery store if we want anything else. I'll stick some olives and cut up artichoke hearts and sliced zucchini on it and call it a veggie pizza. I wish I had some of those graduation cookies, too! Congrats, brandy327

It's been pouring rain all day and a roast chicken sounds really good. Unfortunately I don't have one so I guess we will be having moose burgers. I have a lot of moose in freezer.
