We used to get a kid's atlas when our grandson was younger and he loved that. Then we moved on to playing the License Plate Game, road trip bingo, mad-libs and counting RV's and wildlife. Now he's 16 and sleeps all the way, but I still play the license plate game and count RV's . Some habits are just too hard to break.

We play multiple versions of the license plate game - between dh & I we have 4 apps and a magnet board. So like, one is for cars on the road, one is only big rigs, one is for parking lots, etc. At places like Downtown Disney or Zion, we drive up and down every row of the parking lots to collect plates. And every game starts over as soon as we get home from that trip. This is a VERY intense pass time for my family and we take it quite seriously. DH has been known to speed up and chase down a car if it passes us on the interstate and we miss the plate ID. We always play the alphabet game but the word has to start with the letter to count. Q and X are hard but not impossible. We also play the color car game. Everyone picks a color of a car and you count only cars of your color.

My kids like mind benders and riddles. So we do those often.
I always loved the license plate game but my kids find it boring. Though they did do it on our trip across the country, and had more success so that may be better if you are not staying too close to home. Also the east coast is better for that as well since states are smaller. You see other plates in Arizona, but usually you see the typical AZ, NM, NV and CA. Kwim?

One I just read recently was having your kids watch for/count motorcycles. It gives them something specific to look for, and the added bonus is that by the time they are old enough to drive, they will be used to watching for motorcycles and be more aware of them on the road. They'll be learning to drive safely long before they're able to even drive!
