I'd make a homemade black bean burger for the vegan/vegetarians. If you need a recipe lmk. I've got a great one. A hint when grilling them, freeze them prior to cooking, that way they won't fall apart on the grill.

Grilled Portobella mushrooms can be a great base for little pizzas with mozzarella and whatever toppings/veggies anyone wants to put on it. The cheese could be separate for vegans. Make a little tomato/veggie salad and cut up the mozz, grill the mushrooms and people to top it with or without whatever they want. HERE <<<just googled this to give you better idea of what I mean.

Those kabobs look great and grilled pineapple sounds wonderful!
Not to be Debbie Downer or anything, but if you are grilling the veggies/pineapple on the same grill that you usually grill meat on, there are going to be people who won't eat them. You can taste the residual meaty flavor from the grill unless it is cleaned between uses. My sister was vegan, is veg now, we just put a piece of foil on the grill for her burgers. No need to clean the whole grill!

Don't expect the vegans to eat the pasta salad unless it's obviously not made with mayo. Mayonnaise has eggs. My vegetarian dd likes the black bean burgers from Costco too. And I second cleaning the grill thoroughly and setting aside a portion for the vegan/vegetarians with no meat cooked there. make it obvious what you are doing and be careful not to mix so those who care will know how their food was cooked. If we do a pasta salad I'll make it gluten free pasta and Italian dressing for the topping. Make sure that if you use prepared Italian dressing, it is gluten free. There are a lot of wheat starches used as thickeners in unexpected foods. But if there isn't a gluten free person, I wouldn't worry about it. It sounds like you will have your hands full with all of the other expectations. Yikes!

I'd add veg burgers, hummus dip with pita chips (read to make sure no animal protein was used, be on the lookout for whey, I found that hiding a few times), and plenty of fruits and veg that are good for grilling including pineapple, peppers, mangoes, cherry tomatoes, button mushrooms, etc

I would drop the mac and cheese..it is too starchy..light salads..maybe a german style vinegar potato salad, or a broccoli salad..hearty and light. I would rather eat mac and cheese as it will be hearty and fill me up. I'm not a fan of potato salad or broccoli salad. Mmmmm, me too. I think sometimes people assume vegetarians will only eat light foods and salad type items. I'm a vegetarian that would be happy to take the entire container of mac and cheese straight to a table and have that be my dinner. I wouldn't, but I would want to!
