Tonight is going to be Taco Thursday. This is my last cooking night for a couple of days. Dh and sil are trying to get me to rest before the big Friday and upcoming weekend of graduation and other stuff. I have a great support system here and I hope a good meal says "thank you" in words that can never be said enough.

There's no question that you need to rest, scrapmaven. Enjoy your weekend and all of the graduation hoopla! I still have tons of lettuce, so tonight we're having steak salad. I have a small flatiron steak that I will grill on the cast iron skillet, and then I'll serve on a salad with carrots and squash. I'll make blue cheese dressing.

Last night was cereal! Ha. Still have that lasagna I took out of freezer. I have to hit the grocery store for all the food for our party Saturday, so I don't see this making the cut tonight either. Hmmm. That's all I got. May be cereal again tonight. Tomorrow I have off and I will be doing all the cooking and prepping. I am sure there will be something to eat tomorrow...!

I was hoping we weren't having to repeat yesterday, 6/8. However, I would be okay with that, since I forgot about hot wings by the end of the day and would still like to have them! We had leftover tacos last night, and didn't talk about dinner this a.m. I'm eating taco salad for lunch, so I am vetoing the last taco hurrah for tonight. Maybe we'll have pizza instead. Maven, rest well and have a great time at the grad festivities!

Rest up, scrapmaven! I hope you enjoy (and survive) the coming days of graduation and "other stuff". It's usually the "other stuff" that gets ya. Your meals are prepared with love and your family will get the message. Tonight I'm making a cottage pie type thing using leftovers from the refrigerator and freezer.

This is one of those nights where I just don't know quite what to do. DS has a late afternoon dr. appointment and not sure when we'll get home from that. I am tentatively planning on making dal and either white or brown rice, possibly to be served with fresh corn cut off the cob and sautéed.

Dh has decided that we need to invite MIL over for dinner about once per week It's not a big deal but it is kind of stressful to me because I try to come up with different things ... but she's not picky so I'm thankful for that Tonight I'm getting dh to grill some boneless skinless chicken breasts that I'll marinate in a homemade Greek marinade ... I'll also bake up some home fries and put together a Caesar salad

I am kind of thinking at this point Spaghetti, bread and salad. That all could change though. This is my very full of deadlines and stressful day at work. I may go home and tell DH and DS they are on their own.

We've got half a rotisserie chicken in the freezer and I want the carcass to make stock with the bones I brought back from my brother's todo this past weekend. I think twice-baked potatoes from the freezer and some succotash will do it for tonight.

We will be traveling in the car at dinner time. I've got yummy cheeses, crackers, fruit and trail mix packed up and ready to go for us all to have when we're hungry. We've got about a 7ish hour drive ahead of us. Before we leave, we're going to our son's kindergarten graduation at 1pm! He is so excited, as are we

I will have the 7yo tonight and his favorite dinner is fried rice. It just so happens that I cooked extra rice last night and there's just enough meat left from that Costco chicken to make him happy tonight. I also found some artichokes hidden in the back of the fridge ... another favorite of his. If I don't actually have to take him to tae kwon do myself, I'll cook those, too. Tomorrow is the last day of school! Take care of yourself, scrapmaven . ETA safe travels, newlywoods03! Don't forget to call me if you have time to kill.

Have I mentioned that when dh makes Chinese pie he makes enough for a small army? He's eating that tonight and I'm having the other half of the chicken breast I grilled last night with broccoli and a potato.

So, in order to make him happy tonight we're having swordfish with rice and broccolini. DH left for a work conference today and won't be home until late Saturday night, so I have three nights of not having to cook....YAY for the break! so....tonight I'm having popcorn for dinner....and strawberry shortcake (the biscuit kind).

I like mine with grilled zucchini & yellow squash spears, cucumbers and heirloom tomatoes drizzled with my homemade zesty Italian dressing.

I don't have it handy but there is an orange juice marinade recipe that makes the swordfish so moist and planking them gives them a bit of a grilled taste.

I'm baking a boneless chicken breast topped with Helmann's mayo, garlic, Parmesan cheese and pepper with Panko bread crumbs on top. It makes the chicken so juicy with a crunchy top. Baked potato and Brocolli rounds it out.

I also bought boneless, skinless chicken breasts at Sam's. I think I will make chili lime chicken tonight. Easy and the kids love it. Maybe with rice; I am not sure. And a salad. I should make homemade ranch, that would be good with it, too.

I'm coming up for a breather! Work has just been crazy these last couple of weeks!
After work my daughter and I are headed to Anchorage for a little retail therapy. We will get dinner there, daughters choice. However I am secretly wishing for The Pizza Studio. It's a place that you build your own pizza, kind of like Subway but for pizza. It's super yummy!

DH had steak and baked potato. I had BLT Wrap - thanks to the PEA that introduced me to this. It was delicious because this time I WAITED until the cream cheese came to room temperature. Usually, I'm too impatient to wait.
