Tonight I'll dip back into cooking by making chicken Mozzarella pasta. Acupuncture will refresh me and restore my energy for the week. Then I'll be able to create some nice dinners for my family. Do I sound like June Cleaver?

Actually, I just decided a few minutes ago that I plan to make The Pioneer Woman's Chicken Tortilla Soup A good friend took a trip to Montana recently and brought a bunch of Ro-Tel back for me because the don't sell it in the regular grocery stores here So at least I have that ingredient for my soup Of course Picky #1 and Picky #2 won't eat the soup so they are fending for themselves

I'm a glutton for punishment. Baseball season finished exactly 1 week ago today and from tonight for the next month I signed up the boys for daily late afternoon/early evening swim and water polo classes. Just to making it more challenging there's almost 1 hour from one class ending to the next class starting, which means I'll be hanging around at the pool for a few hours each day because 1 hour isn't near enough time for me to head home and back again. Which is a long winded way of saying, we're having a quick meal of beef enchilada casserole which I pulled out of the freezer, sliced avocado and probably broccoli because I have what feels like 100lbs of the stuff in my fridge.

I took out a pound of ground beef. Whether I'll actually do something with it tonight is another matter. It's entirely possible I'll just talk about it every day from now till Thursday, when I'll finally be forced to cook it or else!!

I had DS take out a pack of ground beef. I want grilled burgers. Plus some grilled veggies. I will also make fries for those men in the house that can't seem to have a burger without fries. Since I read about the chicken sausages at Aldi's in another thread, I may pick up a pack of those and throw them on the grill for lunches this week.

We are having filet burgers. My favorite local, independent grocery has a fabulous butcher, and they take the scraps from the whole tenderloins when they cut steaks, grind it up, press into patties, and bacon wrap them. They are so juicy when grilled as they will be tonight. I'll add corn on the cob and bread crumb covered tomato slices which I cook in microwave until hot and juicy. I add a bit of garlic salt and butter to the breadcrumbs.

Change of plans last night - we had hamburgers - so we're having the cobb salad today that we didn't have yesterday. Just finished putting it all together so it's just cooling its heels and waiting to be dressed and eaten later! And, more fresh strawberries. (It's a June requirement - consume all the strawberries you can!)

Dinner here was salmon in pita (with salad, tomatoes, cucumber and avocado). Icecream for dessert for the kiddos, while DH and I went to buy a new garagedoor AND a new frontdoor. We also needed an emergency visit from the plumber today, so I jokingly told the kids they will only have noodles for dinner the next month.

Still hotter than Hades here....I hate this weather, it just sucks the life out of me. Our best friend is coming over for dinner and a movie, so we're making Philly Cheesesteak Sandwiches on the grill, grilled cream cheese stuffed mini peppers and cucumbers & onions in vinegar. Don't have to turn anything on in the kitchen. I've also got craft beer icing.

We need to ask ourselves if this thread is more menu talk or cheap therapy?! Probably both! Very hot here and neither of us is really too hungry, but I need to cook up some chicken and veggies that are sitting in the fridge. I'll make stir fry and we may eat it tonight or maybe tomorrow.

@iowa57girl - I have been to Iowa City three times for summer writing classes. It was great weather all 3 times except for the final day when the humidity curled my straighter-than-straight hair. I loved it there.
Dh went to the next town over so he picked up some pulled pork from the bbq joint there. I'll make broccoli and tater tots.
