Ooh, I love cheesecake!
I'm a simple girl. My favorite is plain with cherries on top. I do however also like vanilla bean or salted caramel.
However as long as it's not a super duper rich over the top chocolate/pb kind, I will eat it. And even that I would eat, just I would be much better with portion control lol.

At Cheesecake Factory, DH orders Vanilla Bean and I order white chocolate raspberry and we share. My sister-in-law makes individual cheesecake bites with vanilla or chocolate wafer crusts in mini cupcake foil liners, cheesecake spoonfuls and cherry pie filling or strawberry toppers. Those are wonderful.

I like a chocolate marbled cheesecake and Olive Garden has a white chocolate raspberry one that is SO good! I just love cheesecake....not sure there's one I wouldn't eat!

I make pretty great cheesecake and my kids often ask for it for their birthdays (over traditional cake). The favorites here are Turtle, pumpkin and mixed berry.

Turtle cheesecake (no actual turtles) is a plain cheesecake with chocolate ganache and caramel swirled into it. At least in my world. I used my favorite ATK cheesecake recipe, the one that uses 2.5 pounds of cream cheese. Then I swirled milk chocolate ganache and dulche de leche in it right before baking. I also subbed 1/2 c of toasted pecans for two of the graham crackers in the crust. When it was baked, I decorated it with toasted pecan halves. It was just lovely. You could swirl chopped pecans into the cheesecake but I was worried about them losing their crunchiness. mushy nuts are the opposite of what nuts should be. And gross.
The ATK recipe makes a three pound cheesecake. It's very tall and very rich. I can serve 16 from one cheesecake.

I like a whole bunch of different kinds of cheesecake. Sometimes Aldi's (yes, Aldi's) has a sampler pack, we get that and it's delicious! We have only been to the Cheesecake Factory a couple of times but I will get anything with chocolate in it, on it or named after it.

Blueberry!
But...I have to tell you I tried something totally out of the realm for me. I was on a back road motorcycle ride & stopped into a very small town with this cute little cafe called Mom's. I decided to try their homemade pie, which is very weird for me because I hate pie! But the cute little lady talked me into it. It was called Blueberry Sour Cream Pie. OH.MY.GOD! It was so good! Her pie crust was like nothing I've ever had before & the pie itself tasted much like a cheesecake but better! I'm now on a journey to learn how to make the perfect pie crust like Mom's & the perfect Blueberry Sour Cream Pie!
I make a mean cheesecake! It's my most requested dessert.

I cannot pick a favorite; it's like saying who is your favorite child. I make it a mission to choose a different one every time I go to The Cheesecake Factory. I lean towards something with chocolate. After that, something citrusy. We have made Alton Brown and Trisha Yearwood's cheesecake recipes and Trisha's won. Her strawberry topping with lime zest is soooo good!

I make a delicious lemon cheesecake, chocolate cheesecake & white/dark chocolate cheesecake.
The double chocolate cheesecake (white & dark (or semi-sweet) has an oreo crumb crust, semi-sweet layer with chocolate liquor & the white chocolate layer has raspberry liquor in it. After baking it has a dark chocolate glaze & fresh raspberries on top. The recipe is from Bakers Chocolate.
All of them are so good.

I am all for cheesecake. I love it, it is a gift really. I am finding i don't get enough of it. You buy it at my local grocery store and the full sized cake is just tiny. That's not enough cheesecake. I want a Costco sized strawberry cheesecake. I will share it, but I want a meal of it.
And I wonder why I weigh too much. But life is ok without cheesecake.

We have been making cheesecakes in the Instant pot. You cook them in a small 7" springform pan. Its a perfect size for a few nights dessert or for a dinner party.
I have made vanilla, oreo and Smores cheesecake. Last night I made a black cherry amaretto with dark chocolate ganache. It was dreamy.

I like a plain cheesecake with a strawberry or raspberry purée on top and a thick graham cracker crust. I also like a chocolate cheesecake I make with an Oreo cookie crust. I do not like chunks of "stuff" in my cheesecake- I'm looking at you, Cheesecake Factory! No. It needs to be smooth and velvety.

My absolute favourite is a great baked plain cheesecake with cherry topping.
I'm not a huge fan of unbaked cheesecake. The texture is a big part of my enjoying the cheesecake. I won't go out of my way to eat a piece of unbaked and don't like wasting calories on desserts I don't love. My MIL used to make a lot of unbaked cheesecakes, but she stopped when my SIL had to go gluten free for celiac.
My mom made a baked cheesecake a few times when I was really little--my parents went to a huge church that had a big women's fellowship. Then my mom started going to this really weird, super strict Bible College, broke all the records in my dad's beloved country vinyl record collection because they were "bad" (this place didn't even let members listen to the late period "Romantic period" classical music--Tchaikovsky, Debussy, Rachmaninoff...) We moved--I think my dad was trying to get away from this cult--so glad he did. All the nastyness that my brother and I went through with my mom came *after* she defected. (they made her think that she was "saving" her family by isolating everyone from their families and "liberal" churches because none of them were "pious" enough until one day she wasn't...she got a "dear John" letter when they heard that I had enrolled at BJU. Guess they figured my dad wasn't going to give them anymore money...)
I think she used the Philly Cream Cheese cheesecake. I always used that one until I tried Ina Garten's. My mom used a pyrex pan and hid the cracks with the cherry topping. She'd serve it on a buffet with cocktail peanuts.
I like adding a bit more salt to the graham cracker crust. I've also subbed almond meal cup for cup for the graham cracker crumbs.
I'll eat other cheesecakes--turtle's good and so it citrus. My aunt made a good pumpkin once, but I'm just not a fan of pumpkin.
