We came home last night from the boy's orientation adventure and on the way home stopped at Chilis. It was one of the more strange visits to Chili's that I have ever had-we got seated right away but then it took the waitress over 15 minutes to show up and ask if we wanted drinks. Then we ordered and waited another forever to get our food and it was wrong when it did show up. Eventually every thing showed up, but by then we had been picking at what we did have and I ended up bringing most of my dinner home.
So to dinner tonight. The boy ordered chips and salsa as an appetizer and we had so many left that he brought them home. I am going to use them to make nachos. Should be okay.
(I mildly complained on the way out and was told that our waitress was new. No apology or a hey, it stinks. Nothing. We kind of rolled our eyes at that and my son muttered something about 'way to go not taking responsibility for your staff. Poor kid, he was trying to be nice-he bought my dinner for going with him on his trip at the last minute.)

Bacon-wrapped filet mignon with Giada De Laurentiis' grandfather's lemon-mustard potato salad. OMG! So good! Roasted potatoes in a lemon-mustard vinaigrette on a bed of arugula with Gorgonzola, orange peppers and scallions.

Southwestern Shrimp Salad. It's just me tonight... I wanted something yummy and EASY! I used to love making shrimp salads when it was just DH and me but I had to cut shrimp out of my diet completely about 5 or more years ago when I realized it was causing horrific inflammation in my finger joints that I thought was arthritis. I loved barbecuing shrimp and making shrimp gumbo. Oh, that is a bummer! I love shrimp! On the other hand, I am glad that you were able to pinpoint the source of your pain and eliminate it. Who knew?!

Who knew?! I know! My mother suffered from arthritis so I just assumed I had it too. By chance I saw a small article in a the newspaper or a magazine talking about crystals from shrimp getting into the joints and causing inflammation. I thought it was worth a try so I cut it from my diet and was amazed at the results.
