I would poach them, they stay nice and tender that way. And if you poach them in chicken stock it gives them a nice flavour. The time to poach depends on how many breast fillets are in the pot.
If it's just one I might simmer it for 5 minutes then turn off the heat, put the lid on the pot and let stand for 7 minutes.
If there were 4 or more breast fillets I would probably simmer for 10 - 15 minutes, then turn off the heat, put a lid on the pot and let sit for about 10 minutes.

George Foreman grill user here. I pound them out, so they cook more evenly, season, grill them 2-3". Done. Yum!

A lot of time I boil them stove top with some spices-that way I can I save the broth for other uses if I don't use it for the dinner I am cooking that night.

I do mine in the crock pot. I add a little chicken broth or I mix up some Knorr.
I have a friend who does hers in her vegetable / rice steamer, she swears by it! I've never given it a try because I work and want them done when I get home.

I poach mine.
I put them in a pan with enough water to cover them. I add about a tablespoon of salt and maybe fresh herbs if I have any on hand. I bring the water to a boil, then lower it to a simmer. I simmer for about 10 minutes, then turn off the heat, cover the pot, and let the chicken breasts stand in the hot water for another 15 minutes or so. Perfect cooked chicken every time.
