This week kicks off the best time of year...hatch chile season, football, cooler temps, convertible time (well, eventually)...We do still have a while here before the temps are great (although this Summer has been FANTABLOUS!!!!), but at least we are headed that way all the while eating some yummy Fall foods!
Do you eat hatch chile's? If so, do you mind sharing them on the recipe board???

Yummy peppers grown in New Mexico. They come mild, medium and hot heat. So dadgummed tasty! oops! I was on my phone and it autocorrected. Fixed it.

I love the Hatch chiles. Are they sold/branded as such outside if the southwest?
For those wondering, they're just Anaheim chiles grown near Hatch, NM. Apparently the soil or something there gives them a special flavor.

I was in Casper, Wyoming a couple of years ago and every restaurant, regardless of the type of food, advertised that they had Hatch Chiles on the menu. I found it funny. Burger place? Hatch chiles. Deli? Hatch chile soup. Italian? Yep, there was a pasta dish with Hatche chiles.

Our Whole Foods in the Seattle area roasts hatch chiles outside their market when they're in season. Best smell ever! I love hatch chiles!

The roasters are set up all over town with "coming soon" signs on them. I don't have time to process them myself this year. Luckily, several of our grocery stores roast and process them in the store and sell them in ziplocs still warm. You can buy all levels of "hotness." Yum. I'll buy a ton and freeze them.
They do put them on everything and they are truly yummy on most things.

This is one of my favorite things about living in NM... the smell of roasting chile is just awesome! We usually buy a 25lb bag and have them roast it and freeze it in little Ziploc baggies. We eat green chile on EVERYTHING.

One of DH BFFs goes home to NM every year at this time. He brings us both regular and hot peppers,that he roasts there, and brings back in ice chests. We all get together and bag them up to freeze. Love Hatch Chili season! <3

I grew up roasting, peeling, freezing, and eating Hatch chile (spelled with last letter "e" rather than "i") long before it became so popular. I'm glad it's appreciated by a vast market now.
I don't live in New Mexico anymore, but my parents keep my freezer well-stocked with both red and green NM chile. Delicious!

Is there a way to get the specific Hatch Chile if you don't live in the area? I love Anaheim peppers and use them a lot. I'm in MN, home of the hotdish, and my Whole Foods only has Anaheims.

Oh yes!! I grew up near Hatch! We can get them in Central Texas at Central Market. I do chile rellano's, a chile stew with beef, chop it up to throw in other recipes. i will have to find them and post. Love getting them. Hate that over here they cost so much more than they did back home. You could get a huge bag and they would roast them for free.

I live in Texas so we get Hatch green chilis by the boat load. I usually roast them on the grill, peel off the skin, chop up some of them to freeze, some I leave whole to freeze & we have them for a few months. Hatch green chilis are truly the best green chilis ever & worth the wait once a year.

Girl. I live in El Paso. All we eat are Chiles. LOL!! We ride up to Hatch all the time to eat in this little hole in the wall burger joint. Sparkys is amazing. My husband & his fellow motorcycle dudes go on rides there frequently to eat. It is great. You can get the chiles all over, and even Walmart has a giant roaster that they roast them with outside for free. Come visit. LOL!!!

YUM! We buy a ton every August, I spend a few days roasting, peeling and freezing them so we'll be stocked. We use them all year round but we always make a celebratory huge batch of chile verde when all the work is done.

Haha... this thread made me laugh. I live in Albuquerque and my favorite smell in the whole world is the smell of roasting chile. That signifies fall is officially here. It's funny to hear so many people away from NM actually know about our famous chiles and actually love them.
We usually do two 25lb sacks. We use to roast them ourselves on the grill, then peel and freeze but now we buy them roasted and bring them home to peel. My grandmother will usually come over when we are peeling and make fresh tortillas. There is nothing like the taste of a fresh tortilla with green chile and a little salt. We use green chile in so many things. Unfortunately, I don't have recipes, I was taught to cook the old fashioned way... by taste.

I always buy a large amount of roasted ones and freeze them for use in dishes throughout the year. They add such great flavor. Our WF also sells a Hatch chile cheddar cheese that is incredible.

I love them - just wish I lived somewhere close enough to purchase them fresh. They are delicious in salsa verde and I am addicted to green chile cornbread and potato soup with fire roasted chiles.

so, is someone gonna post the best way to do this? I've bought the little cans of 'em but find them rather soggy... there are good instructions online but better to get them here. PW does have info on it from 2008! One tip was to freeze them (chopped) in an ice cube tray. that sounds good! Yvonne - you out there? don't you need these for something to go with your Mexican rice?
added: how hot are the medium? I can't eat hot stuff but I think the canned at the store are mild. Maybe I need to try the medium?
