I just cut up one about 12 inches long..scooped out the seeds but left the peel on... Adding it to my stir fry. Will just barely cook it so it remains crunchy. Will eat some tonight with a piece of chicken then the rest goes in portion size freezer bags for later in the week.

The last one I had came when I also had a fresh turkey (last summer) and a new kitchen aid meat grinder. Best turkey burgers of my life!! I used the fine shred on the food processor after I removed the seeds from zucchini and added it to the ground turkey along with garlic olive oil and pink salt. Super moist burgers. We're doing it again this year! Pink salt???

I usually shred those ones for relish or bread. I already made the relish, so any remaining ones, I chop, blanch, shred in food processor then freeze so I can bake bread in the fall when it's not 100 degrees.
