It's my husband's birthday today but he is on a diet until he passes his PT test next week, so no cake or decadent meal tonight.
He requested chicken enchiladas. Unfortunately, I didn't have quite as much chili powder as I needed, so the red sauce is a little off from normal. Hopefully, it will turn out ok. I'll find out in a few.

Huh, I posted twice on this thread and STILL didn't say what we were having for dinner. I made Risotto Bolognese in the Instant Pot. It was good, and I think on Monday I will take the leftovers and make stuffed peppers with them. Recipes is from pressurecookingtoday.com.

DS1 is at a band event all day. I planned to take DS2 to the mountains, but he could not get moving. Instead, we went to the outlet mall that's only 15 minutes from the house. I bought nothing but a pair of workout shoes for him. Boring.
We ate a late lunch at a little Italian place. I had eggplant parm. and he had a huge stromboli stuffed with meat. Very tasty.
Then, we went to the Fractured Prune doughnuts. My oh my. They were delicious!

Just a quick update: We went to Carrabas. I know that it is a chain, which puts it on the list of plebeian foodstuffs for a good number of folks around here, but I like it just fine.  I had shrimp scampi, a salad, some kind of friend mozzarella sticks, and chocolate goodness for dessert. Actually, I ate the salad, two mozzarella sticks, about a 1/3 of the scampi, and a 1/3 of the chocolate goodness. I will have a really good lunch tomorrow. Most best of all? I got to have dinner with two of my favorite people.

I :  : going to the ballet We're seeing a visiting group: they have been in the news lately for their innovative style ... sort of "shadow puppets" on stage so it should be interesting! They are called Pilobolus and the performance is "Shadowland" I reaaaalllllyyyy love the classical en pointe ballets but it is refreshing to see something different when it is well done ... so I have high hopes Ooh I like the sound if that leannec - I'll see if they're performing in the UK sometime

I polished off the leftover Mexican potato salad for dinner, plus a piece of really incredible chocolate cake some lady brought to the Prima paper doll class I was in this afternoon. I got the frosting recipe from her (didn't have the nerve to ask for the cake recipe, too) and it will be making future appearances at our house.
