i've been altering a lot of my cooking for weight watchers, so not as much IP cooking but still quite a few things. The good news is that I have lost 6 pounds in 3 weeks! Yippee!
Last night I made a pot roast in my IP. I used a packet of McCormick's Red Wine Braised Beef Slow Cooker seasoning and two cups of water, along with an onion, 3 stalks of celery chopped, and two cups of baby carrots. The roast wasn't completely thawed, so I cooked it for 65 minutes and it was perfect!
I made mashed cauliflower in the other IP and we had a full pot roast dinner!

Alright, enablers... I'm about to put an Instant Pot in my Amazon cart, but I'm trying to decide between the 5 quart and the 6 quart ones. We're just a family of 3. When I make recipes in the slow cooker, we always wind up with enough for at least 2 meals. Is there anything size-wise that I'd need the extra room in the 6 quart for, or would the 5 be big enough? (DH said to get the 5 quart, mostly because it's $10 cheaper and he doesn't think we'd ever fill it.)

congrats on your weight loss, elaine! I haven't posted on, or read, these threads for a few weeks-- we've been sidetracked with moving into our new house, and getting our old house on the market. But now, the only thing I have left to do is organize the pantry in the new house (ugh!), and I NEED to get back to cooking again-- there's been way too much 'scrounging' for dinner lately. Off to read the past couple threads! (and snappinsami, hopefully elaine will give you some insight for your purchase... I bought mine on Prime Day and the 5 qt one was the size that was the smokin' deal. So I didn't really do any comparisons.)

Potato soup is keeping warm in my IP right now. I'm waiting on dd and ds and will be home in an hour so I hope it stays good. I had a heck of a time figuring out the keep warm setting without it being automatic. I had the pot shut off while I was adding the end ingredients and didn't want to use saute or pressure or anything.

You can cook less in the 6 but you can't cook more in the 5. ETA : also, for pressure cooking, you're supposed to fill the pot 2/3 full or less.

Have only used the pot twice in two weeks. Been out and with thanksgiving, just haven't had a recipe to use. Will be getting back to it this week.
Funny note..two of my friends have bought the pot and also 2 family members after seeing my posts on Facebook. lol

I'd get the 6 quart one because, as gale mentioned, you can't fill it when you are pressure cooking. Also, you can still cook a small meal for one or two and it won't burn or dry out like happens in a slow cooker. Welcome to the dark side!!

I have a huge pot of WW 0 point Veggie Soup cooking in my 8 quart IP right now. The WW soups I've been making are so good that my family keeps eating them.

As everyone said, you can make less in it but you can't make more in the 5-quart. I use the 6 quart for just the two of us and when my kids are home it doesn't really make enough unless it's soup or something like that. But if I make the full recipe of whatever soup and it's just me and dh I always have leftovers. I like leftovers because it's dinner the next night and then some for the freezer. Also, if you ever think you might make yogurt be sure to get the one that has that function. I still haven't bitten the bullet on that yet but everyone says how easy it is. And it's definitely cheaper to make yogurt than to buy it, especially if you eat it like we do in this house.

Merge, I swear that my chicken & dumplings is even better in the InstantPot also! I think some of it is because now I can make my own chicken stock so easily, and that's what I've used in every batch of c&d that I've made in the IP. DH likes it so much more since I've been using the IP, so we're having it more often than we used to. I really, really want to try making some pho in the IP, but I'm still a bit intimidated. I need to get over it and just try it If anyone has a recipe that they've tried and liked, please share it!

This was the laziest ever. I put a package of fake crabmeat (I'm allergic) in the IP with some water, butter and a squeeze of garlic. High pressure for 2 minutes. I added a little bit more butter when it was done but super easy and quick.

I made potato soup tonight too! It was a huge hit at my house. I used my dicing kitchenaid food processor for the potatoes and onions, so it was super easy. PSA ladies: if there's a tiny bit of onion on the dicer screen and you think you'll just brush it off, DON'T DO IT! It will cut your finger.

We currently only have 4 at home, but one daughter is NEVER home (works 2 jobs and has a very active social life), and the other daughter is a senior in high school and is quite busy, also, and very often not home. Most of the time I am only cooking for the 2 of us. I went with the 6 quart and I'm not sorry. I would suggest that to anybody who wants to purchase one, even if cooking for themselves. I just wish I had one of these years ago when I had all 4 of my kids home!

I made that last week. My husband LOVED it! He said it was like going out to dinner. I will definitely be making that again! I made honey sesame chicken last night. That was a hit the first time I made it and we liked it again.

Haven't IP'd this week bcz I made a lot on weekend and been eating leftovers. Made a butternut squash pumpkin soup and stuffed peppers.
Butternut squash pumpkin soup: Sauteed onion, garlic, celery. Steamed the cut up butternut squash, sweet potato, white potato for 10 minutes on Manual. Added premade pumpkin soup from Trader Joes for liquid, plus more chicken stock. Added chopped cherry peppers. Used handblender to blend and it came out pretty thick, added more stock to thin out. Ended up being a bit spicy, may have added too much cayenne, but I wanted to balance the sweet. Top with roasted pumpkin seeds. (from wegmans)
Stuffed peppers A recipe from a book I adjusted a bit. Sauteed ground turkey, add onion, garlic, spices, 3/4 cup couscous and diced tomatoes. Cook on Rice for 6 minutes. The recipe suggest to set it to Rice, but couldn't adjust the Rice setting, so I just stop it after 6 minutes, QR. I take the meat out then stuff the peppers. It was the latest batch of garden peppers and they are really small this time of year, but I like how it comes out. I probably stuffed about 20-25 halves and stick them in pot, layering, added tomato sauce to cover. Then I just set it on Manual for 3 minutes to heat thru, didn't want the peppers to be too mushy. Really good on these cool nights!
Not sure what is next on the list, but I started writing down the IP recipes I want to try.

Anyone made "baked" potatoes in the IP? I understand that they won't get that crispy skin like they would if baked in the oven. But I'm going to speed here and dh said he doesn't care about the skin. I've loved the other potatoes I've made but I wasn't sure about doing large whole potatoes. Yeah, I could google but it's always better to ask real people. lol

I'm making a beef stew with red wine using the slow cooker function today. I really liked being able to saute and brown the dredged beef and onions in the same pot before adding the other ingredients and putting it on slow cook. I'll let you know how it turns out, but it does smell fabulous.
