I'm not sure what is for dinner. I think I might do PW's chicken tortilla soup. For some reason, nothing comes to mind and the soup will please 2 out of 3 people in this house. Picky eater loves this soup and non-picky eater doesn't like it. Go figure.

Hello scrapmaven It's to be chicken pesto here tonight with saute potatoes and asparagus. DS2 and his girls will be here so I'll do a couple of extra veggies for them and me; DH is not a great veggie lover so it will be nice having others to eat them too.

SO's mom made an extra lasagna that I picked up last night so we will have that tonight. I just have to get some bread and maybe salad fixings.

"Fiskepudding".... with a parisienne sauce, broccoli and potatoes. And brookies for dessert. DS made himself spinach soup (he's competing on Sunday, and need to watch his weight). So no brookies for him until Sunday afternoon.

sweet and sour chicken with rice and broccoli here - which was scheduled for yesterday but we spent 3+ hours at a car dealership and weren't home until almost 730 so picked up pizza instead.
[no, we didn't buy a car last night - we might buy one today though...we'll see]

Thai green curry chicken for me. I cheat a bit - I buy a ready made sauce, and add chicken and extra veggies to it, then serve with brown rice.

I'm continuing my quest to free up freezer and refrigerator space so dinner tonight will be maple dijon chicken from the freezer, served on rice also from the freezer and roasted brussels sprouts, cauliflower, and carrots. miominmio, because I will most likely forget to say it tomorrow or Saturday...good luck to you son! If I remember correctly, he won the National Championship last year, right?

Hello all. I think I'm feeling almost human again. We have several options for dinner. I have chicken stock, cooked chicken, and cooked noodles in the fridge for soup. I also have a package of Italian sausage defrosted that could be used for stuffed pumpkin or spaghetti sauce. It will be one of those things. Probably. ETA I should add that there is no tae kwon do tonight or all of next week. So I will have some time to actually COOK. Like, I can only make stuffed pumpkin on a non-TKD night, because it bakes for two hours and then you really should serve it right away.

We will be having swaia fish tonight with hashbrowns and a vegetable. When I'm in doubt we have fish because it is easy for me to defrost in the microwave and it doesn't alter the taste being defrosted that way......

Well, we went to dh's real estate partners place for dinner last night and had steak ... I brought my famous Chocolate Trifle and it was a hit It looks like dh has to work tonight so it's just dd's and me ... I have no idea what we'll have ... maybe grilled cheese and tomato soup

I am craving meat! So I think I am going to pick up some steaks while I am out today with mil. (I take her out every Thursday to do errands.) I am also going to make a great big green salad. I have been hungry for the past 2 days!
I went to the doctor yesterday for a yearly check up and apparently my potassium is a little low. So I guess I need to pick up some bananas or kiwi also. Other than that I am a picture of health!
I have a question for all of you who do a lot of freezing. If I get a pecan pie from Costco can I freeze it until Thanksgiving and have it defrost and taste normal?

Just wrap it well before putting in the freezer and it will be fine. miominmio, when your son won the National Championship, I had mentioned it to my son and we both thought it was quite impressive. What an accomplishment! We both wish him well this year. My ds is a former wrestler and we are well acquainted with making weight, so I told him about the spinach soup. He got knowing look on his face and said, "That's a sad, sad dinner."

OCC field trip round 2 this morning. I am beat, but it's awesome and the kids love it.
I've got chicken out. Probably will bake it along with roasted potatoes. I'll have a salad with it and the boys will have salad minus the lettuce ;P
That could totally change though.. Chicken of some kind is a for sure thing.

scrapmaven Tortilla soup does sound good! We're finally starting to cool off but is 70 to warm still for soup! Dh is doing pork chops I think something with potatoes. We bought a ton for Thanksgiving too many I think the big Costco ones. LOL!

I've had a super stressful week and today was a hot mess at work. I came home and had ice cream for dinner and it was wonderful! I've yet to enter that meal into my Weight Watchers diary. Oh well. DH will enjoy spaghetti and garlic bread.
