Tonight sounds like a good leftover night. I have a fridge full of leftovers. However, I might have to take trip to Costco in which case dinner will be a Costco pizza. I hate going to Costco a whole lot, but we're gonna buy my mil a new tv for Christmas and we want to bring it to her on Thanksgiving. So, I need to get the tv now. I refuse to go to any big box stores after this weekend until January. (Stomps and folds arms!)
What's on your menu?
Have a delightful Friday and a fun weekend.

Grilling! It's supposed to be 80 here today so I figured we could break out the grill again SO picked up some meat for burgers, and I'll have grilled chicken. Planning to stop at the store on the way home and get some veg for with it. SO voted for green beans (even after I reminded him that they're on the menu for thanksgiving).

It's old time comfort food in our house tonight - my mum's Tuna & Sweet Corn casserole, served with rice. One of the easiest dinners I make, but the one both my sons asked for the recipe when moving out! DH is flying in from Berlin, and won't be home until about 7:30, assuming everything runs to schedule, so I needed something that will keep if I need to eat earlier.

But anytime we have steak, it has to be on the BBQ.

Lots of grilling going on today! We're having grilled burgers and roasted red potatoes. I am not opposed to grilling all year, but dh is. And, it's a known fact that only males know how to grill properly.

I agree, males do the grilling. I will not be in charge of that...it's the least he can do since I do the rest! Ha. We will lose our nice weather for cold temps tonight. But I am not complaining! I do, however, need to dig out my winter coat and hat for my early walks with my Piper. It will be cold. A fleece and windbreaker will not cut it any longer. We are dropping of daughter to her mom's and she will then go to her aunt's on Sunday and will be gone for the week. For dinner, not sure, but will probably grab something after dropping her off.

I have to take the dog to the opthamologist this afternoon and it's a hour drive each way so it's leftover pot roast tonight.

Dh said something about ribs. I tried to converse with him but he kept talking 😕 I'm rather frustrated with a bunch of crap going on lately and chose to take myself out to lunch after visiting my dad. I'm enjoying being alone at the moment.

Well, I made chicken noodle soup for dinner last night (and am currently eating it for breakfast). So that leaves something with Italian sausage. OR could end up being just about anything, as I'm headed out to Costco shortly, as soon as it opens. Yeah, I think I'll pick up a prepared meal I can just heat and serve for tonight, and I'll brown the sausage for future use in something.

But anytime we have steak, it has to be on the BBQ. I grew up in the Midwest, so I remember my dad brushing snow off to grill. Granted, it was probably May and we were sick of winter and indoor cooking - but still. SO claims he'll grill in any weather. We'll see if he holds to it.

I'm making goulash today...easy and quick. It's an abnormally warm day, so I'm hoping to go out and put the Christmas lights on the house before it gets cold! It's supposed to snow tomorrow, so I'd like to get them up while I don't have to wear gloves!

Happy Friday Everyone I'm making a decadent, scrumptious macaroni and cheese, thanks to my sis-in-law and epicurious (her, because she made it last year and we RAVED!) I've posted about it here before---here's the recipe: (my fave part are the panko bread crumbs sauteed in fresh garlic, olive oil, and butter). My usual mac and cheese that I make sans a recipe has tons of extra-sharp cheddar on top that I like to lightly broil---but I like the different topping of this one: www.epicurious.com/recipes/food/views/our-favorite-macaroni-and-cheese-51255890It's actually for my lunch and hubb's dinner tonight. (unless I feel like having it again for dinner, which COULD happen! LOL!) My dear friend is coming over for her birthday lunch, so it went into the oven at noon. I want her to take home a large amount (if she wants to), so I threw in extra macaroni, plus more cheese, so the pan is overflowing!!! I had to put a cookie sheet underneath so my oven won't be coated with bubbling cheese and garlicy panco crumbs! We're also having salad and I love sausage with mac and cheese

I have to take the dog to the opthamologist this afternoon Well, that's an interesting sentence! Hee hee...... littlemama ....that's not something we see very often, is it? Ironic that lindas said her doggie's opthalmologist is an hour away---our girl's isn't a full hour away, but close enough to an hour! Oh, and the TRAFFIC in that area! I HATE driving in that part of the city, so I schedule her appts as early as possi-bull! Our sweet girl (that's her photo in my avatar, 5 years ago when she was a pupp!) needed 2 serious eye surgeries back in May that required a Veterinarian Opthalmologist. When pets need specialists, you'd be AMAZED at the number of miles people drive! I accctually came back to add to my previous post and mention that I also made my dear birthday girl friend a Texas Sheet Cake per her request. I haven't made one in FOREVER---I forgot that the cake alone requires a POUND (FOUR STICKS!!!) of butter !!! Then the frosting has TWO sticks....WOW! I've recently lost weight and am still trying, so I'm only going to have a few bites, and as I would with anyone I make a birthday cake for---she'll take home the rest Now, as far as that mac and cheese with a billion pounds of cheese in it, I'll probbbably eat more of that than I should...but oh well....life is short!

We did sandwiches for lunch with roasted asparagus, cucumber slices, and tangerines. Tonight I hope to get rid of some of the leftovers that's in the ice box.

I think I envy you gals and your pet ophthalmologist being an hour away. My dog's chiropractor is a ferry ride away <ugh> And I worry about a full ferry on the weekends so I always take the ferry one before the one I might need So in addition to the time spent on the ferry and the drive I also have to pay $20. for each ferry crossing. Dang these pets Ok, dinner tonight, I told dh it was on him. He got paid today so if he wants take out fine. But I don't want to have to figure it out! Yep, I'm tired and apparently cranky tonight. My pup got his shots earlier this week and this morning he was whining. I couldn't figure out why and the closest I can think of is it's in his hindquarters where they put his shot. They said he might be sore but it feels like it took a few extra days. So I was up a couple hours earlier then normal trying to figure out what is wrong with him.

I refuse to go to any big box stores after this weekend until January. (Stomps and folds arms!) Well, I agree with scrapmaven - I refuse to go shopping at Walmart or any other big Box store until after Thanksgiving and Christmas now. Made the effort, even though DH was NOT in the mood to go, and went to Walmart today to pick up our items for Thanksgiving dinner. For lunch, we went by the deli and picked up a ham & cheese po-boy for me and a Roast Beef for him which he dipped in beef consommé when we got home. After out trip to Walmart, we want to take it easy. In fact, I'm thinking about a nap - it is cloudy and still hot outside with a cold and breezy front headed our way.
Everybody have a great and wonderful weekend.

The plan was spaghetti.
However, we are at the vet yet again. 3rd time in as many weeks. This time it is for cat #1.
At this rate, we will be hitting a drive thru.

We are having low temps here ...and I'm still cleaning out my freezer in preparation of Thanksgiving.
Chili (thawed out), I'll make some cornbread and have a salad.
