Sharla's reply in the green bean thread reminded me that I too have never bought or used fennel in any way.
So tell me. What do you use it in? Recipes would be nice.

It belongs in the garbage. Lol. I'm not a fennel fan at all. Nothing with any type of anise taste. Yuck.

i just use it in the green bean recipe i wrote about on sharla's thread. it is much better cooked than raw but you could chop it and put it uncooked in a salad. the anise taste is not that strong and almost disappears when it is cooked. it's yummy!!!

My little Italian aunt used to slice up bulb fennel and drizzle it with lemon juice & and we'd eat it just like that!

Fennel and apple salad. BFF HATES, absolutely HATES, fennel.
They were at us for a BBQ and I made this salad. In all the chaos, I forgot to tell her there was fennel in the salad. She LOVED it and asked for the recipe. Refused to believe me there was fennel in the salad.
It is also delicious roasted.
FTR, I don't like liquorice at all but like fennel.

I add it to my chicken noodle soup along with the onion, carrot and celery.
Rachael Ray uses it in a lot of recipes...she's got one with grilled fish, fennel and oranges that is delicious.

The only way that I really like it is roasted. Then I could eat a whole bulb myself.
I put veggies on a sheet tray lined with foil and drizzle them with olive oil. Sprinkle with coarse salt and pepper. Bake at 400 until the veggies start to caramelize. I like them so that the ends are a bit brown and the insides are soft. It's a great fall side dish and super healthy (as long as you keep the salt and olive oil in moderation!) The foil on the sheet tray just helps with clean up.

I sometimes include one with vegetables when grilling or roasting. I'm a licorice fan and have added it raw to chicken or pasta salads before.

I hate black licorice but I like cooked fennel. I do think that it tastes very different cooked, although I'm willing to try it raw in the right form. I just couldn't sit and eat it by itself.
My favorite dish with fennel involves mussels cooked in a wine, butter, and garlic sauce. It was fennel in it and it's DELICIOUS. That's the only thing I used it for but I really want to experiment with it more.

Ina Garten has a roasted shrimp recipe with fennel, diced tomatoes, bread crumbs and feta cheese. It is really good and when you cook the fennel down the anise flavor really does tone down. I am NOT fan of raw fennel, but I will eat this dish with no complaints.

I found a fennel encrusted pork chop recipe on Pinterest that was yummy-used fennel seeds. I also use fennel seed in quite a few things. I don't find it taste like licorice. I haven't really tried fennel itself, but I am willing. Not a fan of licorice though.

Ooooh, I love fennel! I mostly use it in salads or slaw. Another dish I really liked was a potato and fennel gratin, that was really yummy. I recently came across a recipe for potato and fennel tart tartin that looked good too. I haven't tried it yet. It goes really well with potato, pork and fish. And this little baby is a beauty: Salmon, Leek & Fennel Parcels
ETA: I use fennel seeds in cooking a lot as well.

I'm so glad to see this thread, and what a coincidence. I tried fennel tonight for the first time, and it was nasty. I sliced it up and broiled it with some scallops, garlic, and other herbs. Maybe it was because scallops don't have to broil very long, and the fennel wasn't cooked very well (although some of the edges were crispy) I couldn't finish it. Nasty. I still have 1 1/2 fennels in my fridge, so hopefully some of the suggestions above will help me so I don't have to throw it in the garbage.

When I break up and saute Italian sausage for pizza, I always throw in some fennel seeds. It gives the pizza an authentic pizzeria flavor.

I love fennel. I use this recipe as a base: Braised Fennel then once the stock has been added I also add about a teaspoon of granulated garlic and a splash of balsamic vinegar. Cook it until it is nice and soft and the liquid has reduced right down...I find it takes closer to 20-25 mins. Perfect with baked salmon and creamy mashed potatoes (and I also have steamed asparagus with it). It's my go-to Sunday night dinner...and it's cooking right now.

I was just going to make a dish from Cucina Povera which calls for it and I do not have any. Not a fan of it. This recipe was for roasted tomatoes and white beans.
