Tonight it's a tossup between Tuscan bean stew and white chili. I'll ask dh and he can have the deciding vote. I might go get a new pair or walking shoes today or I might continue on my closet cleaning project. I'll see where the wind takes me.
What's on your menu?
Have a delightful Wednesday. Take some moments for yourself.

Of course dh is on a diet so he said we have to have salad tonight ... will the dd's eat it? Ummmm, NO Oh well, they are old enough to fend for themselves Dh and I will be having baked chicken breast that has been marinated in a garlic mixture that I bought at a craft show before Christmas ... And this salad: Cucumber Tomato Avocado Salad

I will be making myself a chicken curry. I will probably add some extra vegetables, depending on what is on the fridge.
I have had an 'at home' day today - no kinder group on Wednesday, and it has been cold and rainy all day, so not very enticing to go out. I've made a start at tidying up my scrap room, begun a pair of socks for a challenge on a knitting MB, printed out some pictures for our wall display at kinder and listened to some podcasts. All in all, a quite restful day.

I found this really interesting Stromboli recipe that I want to try tonight. Sprouts had some really pretty pineapple today and I'm going to give them a dusting of brown sugar after I've quartered them and run them under to broiler to serve along side. buzzyfoods.com/2013/11/20/muffaletta-stromboli/

I'm serving Rainbow on Rice--aka sausage and vegetable sheet pan dinner on rice. My family isn't really into the one-pan dinner things so I'm not sure how well it will be received no matter how colorful my mix of vegetables is. scrapmaven, go for the shoes. Life is too short to not wear comfortable shoes and besides, the cleaning will still be there tomorrow. You might be more motivated to complete the closet project if your feet are happy.

Leftover chicken pot pie and a green salad. Yay, no wondering-what-to-fix today!

We have lots of leftovers ... Italian beef, chicken and gravy, mashed potatoes. So I'll let the boys choose from those and I'll cook some fresh broccoli and carrots.

I'm going to make leannec's Teriyaki Chicken and Veggie Bowl. I've got some broccoli that needs to be used up, and this is an easy way to do it.

DH is out late tonight at a business dinner, so we are taking advantage of him being gone and having Cheese Soufflé, tater tots, and steamed broccoli. He is dairy intolerant, so this is not a meal I prepare when he is home.

I'm going to make leannec 's Teriyaki Chicken and Veggie Bowl. I've got some broccoli that needs to be used up, and this is an easy way to do it. Yay! This is seriously better when you cube up the chicken and stir fry it in a wok ... then add the veggies for awhile ... Cook the sauce on the stove ... sometimes I double the recipe if I'm cooking for a group ... add the sauce to the wok and you are done I use a combo of broccoli, sweet peppers, mushrooms and green onions because those are the veggies we like

nepean, I consider myself a pretty wellrounded cook but have never tried to make a souffle! I've watched a few being made on chef challenge shows . . . hmm, maybe I should challenge myself this winter. We are going with leftovers tonight. Not as many made it home for dinner as I expected last night and I'm not inspired to cook until a few containers in the fridge get emptied.

We ended up having crab stuffed salmon as I made a quick Costco run since DS's TH is relatively close. DS ended up with a brand new garbage disposal and the plumber also fixed a leaking faucet in the half bath. Yay for home warranties!
I think we'll have the clam chowder tonight.

I am going to cook a whole chicken in my crockpot. I will probably roast some broccoli and maybe try the roasted cabbage steak thing I read about here. It will be a no carb dinner.
I am on a mission to cook out of my freezer this week. It's full of mystery!

Dh is sick and I am over my max point since the last 3 days I have been doing everything (I have 2 medical, special needs, ASD kids) so it is soup and sandwiches for dh and I and hot dogs, fruit, and green beans for dd.

leannec, I know you like to claim you don't cook much, but from my perspective you're making great things almost every night. That salad looks wonderful. @calimom2, sorry to hear your news. I hope things turn around soon. scrappert, I'm with you. Our dinner is a big too. I had a steak in the fridge, but it looks like DH had it for lunch. I'll just have to forage high and low to find something. I know we have leftover chili, but hopefully I can come up with something else.

Tacos....quick and easy, since Wednesday is the busiest day of the week. Now the couch is calling my name, and I'm pretty sure I'll be asleep in a few minutes (it's 10 pm here).

scrappert , your dinner sounds delicious. Does it freeze well? Ok, I'm being silly. Freezes great, you can take it out and thaw in a jiffy! There is a basketball tournament starting tonight, she will get the left over BLT's from Monday. Don't know what we will have.

We did not eat at the basketball game last night we came home and I cooked a ham steak (which is not on my diet) and steamed some broccoli and cauliflower. We had home made applesauce too.
So tonight we will be having chicken and steamed carrots with some sort of fruit. I have some pears we need to eat up so I should peel and slice those up to go along with the other food.....

We will have sloppy joes (two versions - one ground beef and one soy crumbles/kidney bean mix - same sauce on both), steamed broccoli and roasted potatoes.

Freezes great, you can take it out and thaw in a jiffy! And you can probably safely re-freeze it too.
