Today I'm off to the big city for an appointment. Knowing that will wear me out, I'm going to declare a leftover night. We have Tuscan bean stew, Chinese food and chicken meatballs with pasta. Everyone will have plenty to eat.

scrapmaven - I hope all goes well with your appointment. I'm also having leftovers. I made a large batch of curry last night, so I'll finish it off today. G won't be home until well after 9, so I don't need to worry about feeding him.

We're having stuffing crusted turkey pie (freezer), roasted sweet potatoes, roasted green beans, cauliflower, and ?, and the canned cranberry sauce that looks like the can because it must be served when serving turkey. Behave at your appointment, scrapmaven. Maybe you'll get a sticker.

Best of luck, scrapmaven. I made fishburgers....and DS claimed he doesn't like fishburgers anymore (he did last month). Grrrrr!! Since there's no way I'm making two dinners, he made himself some sandwiches. Now I'm drinking tea, knitting, and watching The Great British Bakeoff.

Chinese sounds really good, but SO's daughter doesn't like it. Hmmm. Maybe I will grab some turkey slices from deli and make hot turkey sandwiches. Or just the turkey with mashed potatoes and corn. AND canned cranberry sauce, because that sounds good, too. We will see as I go to the store after work. Good luck today, scrapmaven!

When serving turkey, you must also serve canned cranberry sauce and when serving ham, you must serve canned corn.

Dh is on day 3 of strep throat  He is finally feeling better though so that's good! Last night ended up being fresh tortellini with a pesto sauce for dh and I. Tonight will be roasted chicken, cranberry sauce, blueberry muffins, and green beans. My mom is back home. Noooooooo clue what is going on. Glad its nothing but sucks they cant figure it out. I got a ton of crap to do around the house. With 2 asd, special need, medical kids when 1 parent is down, the other parents job just got a lot busier. I am stressed. And tired. And overwhelmed. Ugh

OK, I've decided ... tonight is SKINNY CHICKEN ENCHILADAS and Spanish Rice II ... dh and I loooove these ... the dd's not so much I'll whip up something fast like spaghetti and red sauce for them ... BORING!!! Yes, I am one of those mum's who cook two meals sometimes ... it sucks

So. Many. Leftovers. I had forgotten about some of them yesterday. So tonight we are having the leftover chicken and rice I'd forgotten. Meanwhile I am eating leftovers of leftovers from last night for breakfast. So pathetic. I'm sorry life is so hard right now, @calimom2.

Good luck scrapmaven! I'm trying a snazzy looking "gourmet" grilled cheese. Basically it has several different cheeses, no different than I usually do. But this recipe has a seasoned Parmesan crust as well. It might be another one where the pic is the best part of the recipe but I'm game. I'm also trying out a Parmesan crusted mac and cheese some time this week. I don't usually like baked mac and cheese but the ingredient list was intriguing. Clearly, I either have a theme going or was having a craving when I made the menu.

I wish we had enough leftovers but dh has been working st home all week & eating them for lunch. Usually he travels all week. He's cramping my style for sure.
My youngest informed me it's national tater tot day and begged for them. So I'm making oven fry chicken, tater tots,fruit & salad.
Little Mermaid's first half was so good. 2nd half seemed like add on songs to make the show longer.

Tonite we're having lasagna roll-up that I picked up at Aldi about 100 years ago. Older son is eating out, which is good because when I grabbed the box out of the downstairs freezer, I discovered there were only 6 left - not enough for the 3 of us! Well shoot, another day, another meal to plan and execute. WE have more fresh green beans to cook up along with raw cauliflower and broccoli. That takes care of vegetables so fruit can be fresh pears. The protein can be something made of meat from the freezer. We have chicken, ground pork, and three kinds of fish to choose from. I should do up some dried beans as protein for a couple of meals a week, but that would take thinking ahead.....

I made a grocery run after work, but it was a quick one. The store was very crowded and it's raining outside. Neither of which is condusive to contemplative shopping. For DH, I have chicken tenders (store bought), broccoli, and corn. For me, a salad. Not only is it a bagged salad, it's one of those all in one bagged salads that come with the toppings and dressing. It doesn't bother me! I still have laundry to do this evening and getting the trash out to the curb. Who has time for home made? Warm wishes going out to scrapmaven and @calimom2. You've got the tribe behind you.

Trixie Bender, I forgot to behave. So, I didn't get a sticker. I did get some information about my next procedure and the what ifs... @calimom2, know that you are not alone and that this level of stress is just temporary. I'm sorry that you are dealing w/a worrisome situation w/your mom on top of other stress. ((((HUGS)))). Thank you dinner tribeswomen for always being supportive when I mention a doc appointment or procedure. It's so routine that I forget that it's not normal for this to be the norm.
