Spinach & artichoke dip, I use Alton Brown's recipe and it can be served either cold or hot. I bring along pita chips if I'm serving it cold and sliced baguettes if I'm serving it warm.

I always bring some kind of dessert. My current go to is Magnolia's Bakery Banana Pudding. It's so good you'll slap somebody. Ha!

Chili! You can even make a pan of cornbread to go with it, but it will reheat perfectly in a crockpot.

Maple syrup kielbasa. Slice up at least a couple kielbasa and add in a bottle of any maple syrup all into a crockpot. Put on low for a few hours stirring once in a while. Never a piece left.

Pork Tacos-easy peasy.
Crock pot, one pork roast, one pack of taco seasoning, one cup of water. Let is cook all day, or in your case maybe overnight. Shred, serve on soft taco shells with all the fixings.
Love it!

Thanks for all the great suggestions! I'll come back to this thread next time we have a work potluck, too. This is kid's summer camp type camping situation. We'll be in a cabin, and there is a dining hall with a kitchen with a walk-in fridge. There will be too much going on to actually cook in the kitchen unless I get up in the middle of the night. The freezing idea is a good one. I could fix some pulled pork or BBQ chicken tomorrow, freeze it in plastic bags, and put it in the crockpot at breakfast on Sunday. It would be a good temperature by lunch. I was going to suggest this - but it's not a meat or casserole - but then I that you will revisit this thread for your next work potluck so here ya go. This is so VERY yummy (and so very not healthy, I know). I found it on Pinterest a while back and have made it several times. Homemade Creamed Corn in the Crockpot
4 cups frozen corn (1 lb 3 oz family sized bag) 8 oz cream cheese, room temperature 1/2 cup milk 1/2 cup butter 1 tablespoon sugar 1 teaspoon kosher salt 1 teaspoon fresh ground black pepper (plus more for serving) Combine all ingredients in a 3 quart slow cooker, don't worry about mixing thoroughly, just throw it all in. Cook on high for 1 hour, stir, then cook an additional hour. Serve with fresh ground black pepper.

I just use imitation syrup no reason to waste the good stuff. Not sure I would use mrs buttersworth only because the thought of buttery kielbasa sounds kinda gross

When my MIL hosted backyard picnics and everybody brought something to share she would pre-cook sweet sausage links in the oven then cut them in half and add them to the crockpot that has green and red pepper and onion slices. She would turn on the crockpot and let the peppers and onions soften for a couple of hours, then just mix everything up. At serving time she would have grinder rolls so everyone could sausage onion and pepper sandwiches.

Since you said meat... at our last family picnic we made these ground beef philly cheese steaksand I just kept them on warm in the crockpot (I didn't make the cheese sauce. Just brought buns and sliced cheese)
