This is the classic New Zealand recipe for mac n cheese:
2 tablespoons butter 1 small onion finely chopped 2 tablespoons plain flour 1/2 teaspoon dry mustard 2 cups milk 2 cups grated tasty cheese (a kind of strong cheddar) 2 cups macaroni elbows, cooked Cooked chopped bacon or ham (optional) salt, pepper
Melt butter in saucepan. Add onion & cook until clear. Stir in flour and cook until frothy. Add mustard. Gradually add milk, stirring constantly until sauce boils & thickens. Remove from heat and season with salt & pepper to taste. Stir in half the cheese. Add macaroni and chopped bacon/ham, stirring to combine. Pour into oven proof dish and sprinkle over remaining cheese. Cook at 190C (375F) for 20 mins or until golden and heated through. (serves 4-6)

Hmmm. I just realized that mac & cheese would be a really good way to use the bacon cheddar I got from Trader Joe's.

I'm another one who makes mine with a béchamel sauce and doesn't have an actual recipe. I make my sauce a little thin and undercook the noodles by a little bit. I also like to try different mixtures of cheeses- my favorite so far has been a mix of extra sharp cheddar and Swiss. I bake mine for about a half hour after mixing everything together.

One time I was making homemade mac and cheese and didn't have enough cheddar. But I did have some pepper jack, so I shredded that up and used it in place of half the cheddar. Amazing! Now DH doesn't want it any other way. I use pepper jack all of the time. I like the added flavor!!

You seem to make a much bigger deal of macaroni cheese in the US. Over here it is just pasta in a cheese sauce, and if we are really blinging it up, we might add a bit of bacon. I've seen umpteen different recipes for it on US sites, all very different, and some truly horrendous.
I agree with the pea who said that this particular recipe looked very dry.

Someone on 2peas once recommended the Alton Brown recipe and that's our favorite now.
