Cheeseburger soup. First time I've made it... I couldn't do velveta so I subbed cream cheese and cheddar cheese it was delish!!

We had mini meatloaves and homemade pierogies. The pierogies were really good, but labor intensive. I don't know if I'll make them again. Maybe if the family begs me to. I like it when they beg.

We tried a new recipe that my dd picked out: Baked Cheesy Chicken and Rice.
I thought it was just OK, but it got "thumbs down" by everyone else so not a keeper.

We had grilled cheese sandwiches and tomato soup. I made a new pimento cheese recipe to use for the sandwiches. I have used a different recipe for years but this one sounded interesting. I was disappointed with it, actually, and don't plan on making it again (I have a ton of leftovers to get through!). Hey-- after I posted this, I learned that I am now a "Mushy Pea".

Homemade burgers tonight with jacket potatoes, swede and carrot mash, grilled peppers and peas. I love to hear your nightly menu - it's amazing how many times you've mentioned something and I've had a flash-back to meals I used to make/eat before I emigrated to the US. Carrot and swede mash - yum, totally forgotten about that -hmmmm, maybe I'll make that in the future.

I tried the one that was recently posted on Emily Bites. I hate to even say that because I like that blog and have found some decent recipes there. However, it contains cream cheese and too much mayo. I know-- my bad, my bad. the one I really like is very, very simple and I found it in the Dinner Doctor cookbook. I like it on sandwiches and with crackers. When I bring it to work for 'treats' day I get a lot of compliments on it. Here's the recipe: 8 oz (two cups) shredded sharp cheddar cheese 2 oz diced or sliced pimento cheese (one of the little jars) 1 Tbs minced onion (I use fresh onion, not the dried stuff) dash of Worcestershire 1/4 cup mayonnaise (I use the olive oil mayo) Black pepper Mix cheese, pimentos, onion, and Worcestershire in a bowl and stir to combine. Fold in mayonnaise and stir until well-blended. Season with pepper to taste.

It was going to be roast chicken, but I ended up at a very lenghty appointment. Luckily, I had a fridge full of leftovers and they were well enjoyed.

Tonight I have my monthly Italian cooking class. Our instructor is going to show us how to make her favorite 4 course meal from her childhood in Milan, Italy. I'm looking forward to tasting it What's on your plate tonight? Wow, I'm in envy. Wish I could take any cooking class, they are few and far between. Still hoping to at least take a mofongo class someday (mashed plantains made into a what I call a volcano and filled with shrimp or chicken with a garlic sauce).
Tonight I made a simple recipe from Food Network magazine; roasted chicken with leeks. Also butter & herb rice, Cheddar bay biscuits and salad with some local odd lettuce. it was simple and really good. sometimes I'll buy leeks but put off making whatever I buy them for and end up having to toss them. Not this time, yay!
