A bag of shredded cheese is 8oz and most of them say the bag has 2 cups in it.

A cup is a volume measurement - usually liquid, but can be used for dry goods too. 8 oz of weight (which is how cheese is generally sold) isn’t going to translate to 8 fluid ounces, which is a cup.
But, as someone pointed out, shredded cheese is usually about 4 ozs of weight to one cup.

Yes. People confuse fluid (volume) ounces with weight ounces all the time. 8 oz by weight of shredded cheese equals 2 cups (16 oz) by volume.

8 oz = 1 cup 16 oz = 2 cups Not for shredded cheese. 4 oz = 1 cup, 8 oz = 2 cups. OP, I usually just take the ounces of cheese and grate it, without measuring out the finished grated cheese. No need to compact it, as I'm measuring by weight, not volume.

While I would love the ease of the metric system, I don't think I'd love weighing things. I'm a girl who loves to scoop and toss.

Unlike the US where a cup of flour can range anywhere from 3/4 c to 1 1/4 cups depending on how much the cook packs the flour or fills the cup.

For grated cheese 8 oz. = 2 cups
Also, just a tip DO NOT use pre-shredded cheese when making pimento cheese - it is much better if you grate it yourself
