Update: MIL decided this is NOT a Christmas gift, its just a gift. SILs were ugly about it so they didn't get one, just me! I'm going to try this puppy out tonight with a whole chicken. Still not convinced I need it, but I'm going to give it a good try.
OP:
MIL has decided that I and both her daughters need them. So she's buying them for us. It's really very sweet of her, but dang it, now I have to learn a new gadget.
I don't use my crockpot all that much, maybe 2 or 3 times a month. DD doesn't care for pork or beef (except ground beef) or shrimp. DH only likes low fat, healthy dishes. None of us like anything with beans in it. I'm just not sure what I'll be making it in. I know it steams rice, but do I need whole new thing to clean when I can just cook it on the stove top? I know it steams veggies, but I can also do those stove top or roast them in the oven.
Am I really going to use this thing or is it another appliance I have to find somewhere to store?

What about making yogurt, hard boiled eggs, veggie lasagna, cheesecake, soups, chili? Once you start exploring all the things you can make with it, you’ll wonder how you ever lived without it!

I'm in the same boat. I think it sounds like a great tool / gadget to have, I just don't know if I will use it all that much and don't have much storage space to begin with. I do need to clean out some cabinets, etc but who has time?!

I bought one for my SIL last year based on Pea reviews. I think she thought it was "nice." Now she LOVES it and uses it multiple times per week.

I use it most for eggs, potatoes, and macaroni and cheese. I have yet to to make a meat dish in it.

I use it for so many things I can hardly keep track anymore - soups, chili, sloppy joes, spaghetti sauce, hard cooked eggs, steamed vegetables, corn on the cob, cheesecake, roasts, rice, mac & cheese, etc.
When I first got mine I said I'd make a point to use it once a week. I use it multiple times a week.

I bought it on a whim and I've used it way more than I ever thought I would. I think I used my crock pot twice but this is so much better.
Mainly I use it for eggs, oatmeal, homemade soups, potatoes, squash, beans, rice, and things like Thai chicken curry with chickpeas or bbq chicken with steamed baby potatoes. I don't prefer my pasta in it and I don't steam green veg in it, I think those are easier/tastier on the stove top.

I love my Instant Pot & use it often throughout the week! A friend knew how much I loved & used mine, that she surprised & gifted me her NIB, larger model! It's doubtful that my crockpot has been used 5 times this past year.

I got one for my parents last Christmas. My mom was thrilled to try it, my step dad, not so much. He texts me at least once a week to tell what he just made the best of, in his IP, every time he tries a new recipe. My mom gets to make potato salad now; that's about it. I just ordered him a vinyl decal for it that says Back off Papa's pot.
I cook dinner 6 days a week, and I use it for all, or at least part of the meal probably 4 days a week.

Well hopefully you'll learn to love it. The first time or two is a little scary because of the steam but once you learn how to release it (it's not hard at all), it's great. I have a 6 qt and I use it all the time. I haven't touched my crockpot once since I got it. I would like to get the small 3 qt just because I am making smaller meals, but also because - quite honestly - I find it a really easy way to rewarm stuff. For soup, etc. it may take a little longer than on the stove, but I don't have to babysit it. I put it in, turn it on, and come back when I'm ready. I don't have to monitor the heat, turn it town, clean up an overflow (because heaven help me I can't even boil water without it bubbling over), or clean up a scorched pan. It's no harder to clean the liner of the Insta Pot than it is to wash a pan but it just makes things easier for me.
There's a learning curve, but honestly the food is so much better than in a crockpot - and I'm a pretty big fan of crockpots.

I probably said this before on other insta pot threads hit here it goes. I was one of those who didn’t want another “big ass thing” in the kitchen. But bought an 8 qt. Week or two later, I bought extra insert. Four weeks later, I bought the 3 qt. Last week, I made dinner at home 4 nights in a row and in Friday night, I made three dishes. And I didn’t turn my stove on once entire week for making that said dinner. So, go figure . Few things I made/make. Made 40 hard boiled eggs in one shot with so little water and in 6 minutes for a party I make “warm” salads with cauliflower, asparagus, mushrooms. I saute the veggies in instabpot for a minute with some spices. Break an egg ir two on top. Steam for 2 mins. My lunch/dinner is ready. Pastas, ramen noodles, soups, curries, red rice (a.k.a beetroot pulao), egg biriyani, chicken biriyani - the list of things I have been making is getting longer. I am planning to make mashed potatoes, gravy and cranberry sauce in the IP for thanksgiving I also keep a notebook in my kitchen so as to write how and what I did in the insta pot because most of the time I don’t follow a recipe I see online to the T (bad, I know). I also avoided the FB instapot community at the beginning as it was overwhelming. I follow this old gal’s recipes.

Yesterday we steamed a whole pumpkin to make pie. So easy, cooked, then removed seeds and puréed the flesh, and cleaned up in less than 30min. Then made cream of asparagus soup for lunch. Again, from start to finish was less than 30min. For soups, stews etc it is ideal. Can cook very health conscious meals in it. Biggest things to realize is that it isn’t “instant”. When working out timing you need to include time to come to pressure before cook, and time to release pressure after.

It's funny, I gave away my first one because I just wasn't a fan, it was quite a large gadget for my small kitchen and I didn't use it. Then another friend gave me hers and I've used it for a lot of things.
Chicken thighs + taco seasoning + salsa Spareribs Korean flavor beef Tiny potatoes with bacon and green beans Chile garlic chicken Butternut squash soup Breakfast egg bites like the ones from Starbucks

Like others, I use mine for hb eggs, rice, corn-on-the-cob and potatoes mainly. I find it easier and more foolproof to get it right. I also like not tying up the stove or oven when I'm making multiple dishes. I often serve from the stove or do buffet style. When serving a dish with rice, it's nice just to put the paddle near the pot and let people help themselves, rice stays perfect and doesn't dry out.
I'd like to experiment more with it in the future but it's been a good little workhorse for staples.

The best thing I've done since I got mine a few months ago, other than listen to elaine, was to go on YouTube. Just put Instant Pot into the search bar and you can't even imagine what's out there. And people SHOW you how to do it.

I haven't tried hard boiled eggs in mine yet ... I will be this week for deviled eggs for Thanksgiving. :-)
From what I understand, they are VERY easy to peel. Even fresh eggs! We'll see.
I do use the IP multiple times a week.
I always have had a stove top pressure cooker and sometimes I have them both going! Especially on meatloaf / mashed potato night!

I was going to say that if you forget about the eggs in the IP, like I did a few weeks ago, and come back 25 minutes later the eggs are not ruined. But, I know some people do the stove top method of heating the water with the eggs in it, then turning the water off. So 25 minutes probably wouldn't ruin those either. But the main thing for me is how well they peel! My stove top hard boiled eggs were NEVER easy to peel and often came away looking like they had a disease. I can't wait to make deviled eggs for the holidays with my lovely smooth eggs that fell out of their shells.

Leaving aside how useful they are, I'd be a bit annoyed if my MIL or anyone else for that matter bought me an IP or any other kitchen/household " gadget" for my Christmas present.
OP..why is she buying you this and not for her son? Unless of course it's between both of you.

DH hates the crock pot and has never used either of the one's we own and complains the food made in it is mushy and bland. He's in love with the InstantPot he bought me for my birthday though... so he's been making dinner more often Most of the recipes I've found online and made in it do not have enough seasoning... other than that they've mostly all been hits. I haven't tried yogurt, eggs or anything like that yet.

I've been wanting the smaller 3 qt for side dishes and Amazon has it for $52 right now. Just bought it this morning since it's the lowest I've seen it (been watching since this summer). Instant Pot 3 QtI was hesitant in buying it a year ago, because I was worried it would be another unused, large appliance that I had to find room for. It quickly replaced my large crock-pot. I have quite a few favorite recipes now and use it multiple times a week. Now that I have the smaller one on the way, I'll be able to make sides of rice or potatoes at the same time now! My husband is going to be thrilled because he loves how rice comes out in the IP vs the rice cooker. And my rice cooker took forever. The IP make rice in easily a third of the time that my rice cooker does.
