Looking through my fridge I have lots of spinach and kale that needs to be used before it goes bad --- what are your favorite things to make (besides spinach salad)? I've gotten some good ideas here in the past for brussel sprout recipes...

I don't like spinach, except and spinach salads. I will eat that like crazy. I gently add some grilled chicken, some Mandren oranges onions cheese and croutons. Absolutely love it. But if you cook it, it better be in something I cannot taste. I can eat cooked spinach in, for instance, quiche. It is fine in cheese dips and crab dip's. But just put some cooked spinach on a plate. Gag.

Steam kale and then mix with sautéed chopped onions and garlic, dark sesame oil, and sesame seeds
Kale salad - Raw kale, washed, torn, dried. Massage by hand to soften it up, mix with a little olive oil, vinegar, lemon juice, salt and pepper, tahini. Add thinly sliced red onion, toasted slivered almonds, finely shredded carrots, dried cranberries, edamame or chopped dry baked tofu (or chicken). If you have leftover cooked whole grains, toss some of those in as well. I could eat this every day.
Spinach - cook it and it will cook down to very little. Add some balsamic vinegar.
Spinach and lentils - I made this last night and it was really good - cooked lentils sautéed with onions, garlic, tomatoes, pureed roasted peppers and eggplant, with spinach thrown in (I too had to use up a bunch of spinach and some cooked lentils, so it went together quickly). It was really good over brown rice. The peppers and garlic made the dish.
Puree either green in a green smoothie (I can't seem to force myself to drink green drinks, but a lot of people love these).

Cook some spaghetti. When it's about half done add kale. Drain when the pasta is done. Toss with soy sauce, toasted sesame oil and toasted sesame seeds. Serve warm or cold.

kale chips kale in pasta dishes(prefer alfredo over marinara) spinach on my pizza spinach in pasta dishes (prefer marinara over alfredo) spinach or kale in cold pasta salads spinach in smoothies (kale is to bitter for me) spinach/turkey meatloaf kale/turkey meatballs

The only time I have had kale is in the soup they have at Olive Garden. I like spinach in salad, don't like it cooked.

I have the most amazing recipe for a vegetable pie using spinach, pumpkin, goats cheese - I can't remember the other ingredients off the top of my head. It uses 1 kilo (!!!) which is about 2 lb 3 oz of spinach - baby spinach leaves to be precise. That's a LOT of spinach!
And of course my old favorite Spanakopita or any variation of spincah/ricotta/filo pastry.

Look for Japanese pancakes that have kale in the recipe . They are easy to make and delicious.
