Yds made it home safe and sound. His gf came right over after her last class and all was right w/the world. Now I have to figure out dinner for tonight. Yds likes Chicken Teriyaki bowl and so does his gf, who will likely be here. If dh buys in then that's my plan. What's on your menu? teddyw, how is your dad doing today? Last night's Diabetes Nutrition class was very informative. Definitely had to change my breakfast eating habits. I was eating WAY too much cereal. I had to cut it in half which made me sad because I love it so much.
Not sure what's for dinner. Maybe salmon.

cadoodlebug, did they advise you to eat protein when you eat carbs in order to even out your blood sugar? Perhaps an egg white to accompany your breakfast? I'm not a nutritionist, so please ignore me.

Big lunch today so snack later. Probably the last of the coke slaw and maybe a couple pieces of cheese
I find I prefer eating a larger & later lunch and going lighter at dinner time.

Hamburgers, mashed potatoes, gravy, salad, sautéed onions and green beans. Dh set the menu at 4:15 am when I had no energy to argue (or even speak). It’s all good and he’s a champ for cooking, cleaning and taking care of Ally.

Dinner tonight is chicken with vegetable stew and pasta. All I have to cook now is the pasta, so it will be ready quickly.
I went into the city today for a bit of a walk around and to pick up a few things I needed. As I was getting on the train to come home, there was the usual crush at the doors at the front and back of the train, with hardly anyone in the middle. Then we heard the driver announce: 'There are 20 doors and you can open them all. This is a train, not an Advent Calendar!' I had to laugh, and thought it was great that the driver can keep a sense of humour in the Christmas crush.

Yesterday I went to Costco (and yes, I did buy a chicken, but we didn't eat it) and picked up one of the 8yo's favorites ... shrimp cocktail. We ate that along with leftover chicken & veggie soup, and dinner rolls from the freezer.
Tonight is a school fundraiser at Chipotle, so we're headed over there before tae kwon do.
This afternoon, a box is arriving from Blue Apron (which I forgot to cancel last week) so I'm feeling kind of grumpy about having to cook for the next two nights. LOL
I have now made sure to cancel both Blue Apron and HelloFresh until after the holidays, at which time I will decide which one is going to have to go.

Oh Geez, I have to cook tonight? I want something with flavour so I'm making BAKED PESTO CHICKEN ... it's new for me so we'll see how it goes ... of course Picky #1 and Picky #2 probably won't like it but Picky #1's boyfriend will eat almost anything so it's all good ... did I ever mention that I feed him about four nights per week I'll serve it with some sort of salad I think since we had pasta yesterday ...

For the fourth time this week I am going to try to make that sheet pan dinner. I was going to make it last night, but right before I walked in the door of home I got a text from DS. He told me he wasn't feeling well and would I please leave him alone for the night. So since he didn't feel like eating, I made myself a sandwich and then made toffee bars for our birthday treat day at work today.

The lady in front of us had a fasting glucose reading of 400.  Like the nutritionist said, we aren't going to change our diet overnight. Just making steps in the right direction now. She said most people think if they have diabetes there are foods they should never eat. She also said that isn't true. Moderation in some foods is what is required. Luckily I'm not a drinker or a heavy sweets eater.

cadoodlebug, when our nephew developed diabetes around age 8, DH & I had to learn the ins & outs of what he could eat & when because we would often take him for a day or two. Making sure he paired proteins with carbs was a big part of the plan and making sure he exercised every day really helped keep his blood sugar even. It's hard to lose a favorite breakfast though. Pizza was the toughest for him to give up as it always made his numbers go through the roof and just wasn't worth it. DS is 19 today and in the middle of exams so we'll go out for dinner on the weekend. He'll make do with a mini celebration tonight and I'll make Korean beef, roast carrots & broccoli and rice with an Oreo ice cream birthday cake. teddyw I just saw your post in yesterday's thread. I'm so glad your dad is ok.

We'll be having something using the leftover rotisserie chicken, just haven't figured out what yet. Since I'm not feeling terribly creative today, we'll probably just slice it, finish up the rice, and add a veggie of some kind.

Tonight I am trying leannec recipe for creamy Tuscan garlic chicken. I am thinking about making zoodles instead of the pasta though.

For our dining pleasure this evening we will be enjoying baked meatballs with pasta. Along with that culinary wonderment we will also have cheesy cauliflower and broccoli. The Birdhouse Lady congratulations to your daughter for passing rehab......and congratulations to you for helping her along the way...... #The Tribe, all your meals sound so much better then what I cook, I cannot decide if it is because I am not cooking it and you are or if I am just sick of the food I cook......LOL I lived through the night of couch surfing, got everybody to bed and up again, fed twice and to school on time.....it was a success! It has been a long time since I got up at 7 am, woke other people up, made French toast, and then drove to town in my jammies to do school drop off.....LOL! Happy Tuesday Everybody!

I came home from work a little early so I could finish making several batches of granola (work Christmas gifts). After putting the first batch in the oven, I discovered I'm out of old fashioned oats which are the primary ingrediant in my granola. Will I be going down to the store to get more oats tonight? NO! I'm already in my PJ bottoms. It will have to be done tomorrow. I have much more important things to do tonight, like open 3 days worth of Peas Christmas cards! Dinner will be cheese tortellini with red sauce and a veggie side. lucyg, you have my deepest respect for going to a school fund-raiser at a restaurant. Our school has one this week and I avoid those events like crazy. You are a wonderful grandma. The Birdhouse Lady, so happy for your daughter and her important health milestone. sueg, I enjoyed your train story. Funny! cadoodlebug, I'm not clear on what type of diabetes you have, but my mom has been able to control hers with just making changes to her diet. I hope the best for you too.

@ the birdhouse lady so glad she’s done with that. lucyg I love a school fundraiser at a restaurant. No cooking! I made oven fry chicken from the box in the bread crumb section of the store. I dip it in buffalo sauce first instead of eggs. We had baked potatoes & cake. Skipped the salad. It’s just dd & I. She had to work at 5 so we ate early. Picking nephew up from his university. His last final is tonight. He’s meeting my sister in Disney tomorrow. I’m dropping him at the airport before work tomorrow which is super early So today I took my swap cards to the post office and a woman who seemed to be speaking some Eastern Europe or Russian had a newborn baby in a diaper only. It was 23 degrees F. She was swarmed by other women trying to help. My dad is fine. Hiding in his room pretending to nap to avoid my mom. I’m so sad for him.

cadoodlebug, I'm not clear on what type of diabetes you have, but my mom has been able to control hers with just making changes to her diet. I hope the best for you too. I assume type 2 since I'd be immediately on insulin if it was type 1. I emailed my doctor about testing my blood and he's calling in a prescription for a glucometer. Me and my big mouth.

Tonight I am making both honey garlic and salt and pepper wings for dinner. I will make some noodles, broccoli, tomato and salad. DS should be home by about 7:30 and he said he would eat when he got home. He hates eating on the ferry, he hates restaurant food, and he only really likes to eat at home.
