My adult children have decided to come spend New Years Eve with DH and I. I thought we were going to have a quiet evening at home, but as of an hour ago I learned I will be celebrating with 8 adults and 4 little ones.
I have no idea what to make for all of us to eat. Most holidays my DH insists on a big meal like, ham or prime rib. I'd rather do something less formal.
Does any one have any suggestions for some quick and easy dinner items? I'm going to ask the kids to bring the liquor and some appetizers. TIA

Honestly... I'd whip up a couple of easy appetizers and tell the adult children that dinner is up to them.

I'd probably go with some taco soup, chili, brunswick stew or something like that. Taco soup is my go-to for feeding a large crowd. It is super easy and not too expensive that's a factor. We have a taco soup bar with onions, cilantro, sour cream, cheddar cheese and some pepper jack for those that like it spicy. We do tortilla chips and tortilla strips if anyone wants that in the soup.

mcscrapper - Thanks for the idea.I don't make a taco soup but My kids love my potato soup and my chili. Both would probably go well with appetizers for the evening without being too heavy.

I would make it a potluck. Make a crock pot full of chilli or pulled chicken and pork and let everyone contribute.
Be clear you'd love their company but aren't prepared to do a lot of work.

We've done appetizer parties, usually with board games, ever since DD was little. It is a fun little tradition. I'm about to pick up my grocery order, including the ingredients for hot onion dip and sausage balls for my own little NYE party.

We like "Frito pie" Canned chili (or homemade if you feel like making chili but canned is super easy) Frito corn chips, grated cheese, sour cream and dice onion. Put a handful of chips in the bottom of a bowl and ladle some chili on. Top with cheese, onions, or sour cream as desired.

We get together with a couple other families for New Years Eve. We do appetizers and a dessert. If I were looking to make it more of a meal I'd make wild rice soup or some type of hot sandwich - sloppy joes or pulled pork.

I like to serve brisket when I have company on holidays. I can throw it in the oven in the morning and let it cook all day. I serve it w/ rolls (so that my guests can make a sandwich if they wish) and a side dish such as baked beans. It makes for a super easy, but festive meal.

NYE is for appetizers. Just make sure you have some that are kid friendly and you are good to go. And you can have each family bring something, too.

We usually do just appetizers and snacks, though I was considering making fettuccine Alfredo this year.
There is always pizza, a taco or baked potato bar, a large tossed salad with pita and hummus if you have vegans in the group.

Thanks for the suggestions - The hardest part is convincing DH that we don't need a formal dinner. He loves to cook big for the family while I prefer appetizers, finger foods and paper plates!

My standard answer: Burning Feather's Italian Beef! Seriously, it is so easy since it just hangs out in the crockpot all day.
It is also so versatile. I usually serve it with sauteed onions and peppers with some mozzarella cheese in small rolls. In Christmas we discovered it is fantastic with a bit of red sauce on top as well. It would also be great as a potato topping or nachos.
FYI, leftovers (if there is any) freeze well, and can be reheated and served over noodles with a bit of paprika and sour cream for stroganoff.

I agree appetizers and finger goods are fun for NYE.
Fondues are a ton of fun. With a big group, I'd just do a cheese and chocolate.

We always have roast pork with sauerkraut for luck for new years. Im actually bringing some back from Pennsylvania so my boys can have it.

Baked ravioli in a huge throw-away foil pan! Sauce, ravioli, cheese, repeat and bake. Salad and garlic bread.
Burning Feathers Italian roast beef sandwiches.
Big pot of broccoli cheese or potato soup, salad and crusty bread. Or funeral sandwiches to go with them.
Or mix of sliders. So many options on Pinterest. Bonus, they can be made ahead of time.

Let your dh make chili if he needs to cook something. Then you can make the appetizers. Appetizers and some goodies for dessert are a NYE norm. You can do lots of easy apps, too. No need to make a big to-do for NYE. It's last minute with lots of people.

If I were in your shoes, I would make a pot of soup or chili and maybe have some appetizers. Nothing complicated or super heavy.

I am sure your family wants to visit with you and they don’t want you to have to do a lot of work for them.
I would check to see if the nearby pizza delivery place will be open (most likely will be) and I would order pizza for everyone.

I didn't know people had actual meals on new years eve. We've had appetizers and desserts since I've been alive. It's our last hurrah before we all set resolutions and eat healthy for the next 4 weeks before we break down and eat wings for super bowl and then give up again

Would you mind posting your taco soup recipe? Thanks so much Sure! It is so easy! This recipe is for one batch but you can make as much as you need. I'd say one batch can easily feed six people. I do my soup in a large Dutch oven but I can just barely get two batches in there. 1lb ground meat - beef or turkey. If I'm making multiple batches I use one of each. yellow onion - to taste 1 package of dry Ranch dressing mix 1 pkg of taco seasoning or 1/4 cup of your favorite taco seasoning 1 can/bottle of beer. I use Yeungling because that's what we normally have on hand around here. you can use about 6-8 ounces of beef broth but use the low or no sodium variety. 1 can Rotel - I like the Mexican style but also use the mild variety. do not drain. 1 can of corn - I like the mixed white and yellow. Rinse and drain. 1 can black beans, rinsed and drained 1 can Ranch beans - do not rinse the can Brown your meat with the onion then drain the grease. Add your dry seasonings and blend with the meat. Add the can of Rotel and heat through. Slowly add your beer. Add the remaining cans and stir. Use that Ranch beans can to add some water and scrape out all the juicy goodness from the inside of the can. I usually rinse this can twice and it gives me great flavor and gives some liquid to the soup. Serve with a dollop of sour cream, shredded cheese and tortilla strips. If you need this recipe to stretch a little, add some elbow macaroni and tad more liquid if you still want some soupiness. We add the macaroni on the second night for leftovers but don't add liquid so it makes more of a goulash type of meal. We love that, too! SaveSave

I don't cook on New Years Eve. We get subs and heat up frozen apps like mini bagels and pigs in blankets.
If my DH insisted on a big meal, he would be cooking it himself...
