I wouldn't worry about what's in or out. As long as you like it, that's what matters.
I would put a kitchen type sign, that says "Bob Appetit, Cafe, Bistro, Eat-Drink-Be Merry, etc...", a wine holder with a couple bottles of wine, and whatever else you like or goes with your home decor theme.

I have a thing for old wooden bowls which is what is above my cabinets right now. Various sizes and shapes. Some painted, some natural. some stained and/or varnished. All old or old looking. They are sometimes taken down, used and returned above. So they are useful decorations.

I wish I could put things above our cabinets, but they are enclosed. My mom is an interior designer and she has stuff on the top of hers. A few of her favorite Longaberger baskets, a few antiques and some greens. It looks amazing!

KikiPea - Can you do a couple of colorful pendant lights over the island? That would add interest. I also think pottery or other kitcheny art over the cabinets would look good. I wish we could, but we have a skylight over it. Nowhere to hang them.

I've never had space above our cabinets until our current house of 2 years. I didn't really know what to do with it.
I collect mixing bowls and i put stacks of them up on the top. I also have one of those farmhouse looking signs on top that says BAKERY, that is about 4 feet long. So while i wasn't trying to really decorate the tops of the cabinets, my collection worked out great up there.

I didn’t care if it was in style oe not when I put stuff above my cabinets 🤣.
That being said, remember that they do collect dust and you have to step up and clean and it can be a pain. Before putting my “decor” on the abinets, I lined it with parchment paper. I just replace the paper every few weeks. I also didn’t do any fake plants or garlands and things (because I can kill even fake greenery and I feel like they collect more dust).
I will tey and get some pics but most my stuff came from scouring Homegoods and Tuesday Morning stores.

I’ve started collecting a few things, and this is what I have, so far. I have a cool decorative teal dish to put over the pantry, but don’t want to drag in the ladder (too high for my short self, and three step step stool. 🤪). I’ll have DH set it up there tonight to see how I like it.  There are some wine and whiskey bottles I’ll be putting up there that are sitting on the counter below. I will be looking for additional items, as well as canisters. Am I doing okay, so far? OH! The items will be setting higher so you can see them better, but I wanted to see how I liked it.

I think there's a lot of potential to add color/decor on your countertops with grouping what you already have. Adding canisters is also an option - are they replacing something currently on the counter or will they be a net new addition?
Colorful fruit bowl/basket? It looks like you store bread on top of your fridge - what about a basket/bin for that?
In addition to the decor on top of your cabinets, I think adding similar colors on the countertop and even on top of the fridge will tie it all together visually.

How about a big, bold vinyl quote on the wall....something that is meaningful/relevant to you and your family. Etsy has tons to choose from, all sizes and colors. You could put some rope lights on top of the cabinets for a warm glow and highlight the quote.

Are the objects kind of stepped down on top of the cupboard? If so you can put books under them to elevate them a little. I love that eat sign. I’d move that forward and put something small behind it to hold it up.

I'm looking for the right quote. I wanted to use, "As for me and my house, we will serve TACOS." Salsa 24:7, but as much as he LOVES tacos, he's not crazy about that quote.

I'd be careful with the glass. It's going to show dust like whoa. Also what's the deal with putting whiskey and wine up there? Are they full bottles or empty? Full bottles it's just inconvenient to get up and get there, ruins the look of the decor. Empty bottles, again -- lots of glass. Dark glass really really shows the dust. The things I like best in your arrangement so far are the metal items, I think dark-bright or substantial items have more impact. Look for some ceramic items instead of the glass.
Also agree with the suggestions to group and contain the items on your counters. There's a lot going on there. TBH it looks messy but throwing the same stuff in a bin or on the speed rail (good idea!) really makes it look less cluttered. Maybe you could do your taco quote on the front of the speed rail in a bright color vinyl, if your DH would object less to it smaller/less in yo' face. What about painting your knife block?

Maybe I could paint one. They have to stay where they are, because they don't all fit in our designated cabinet. Don't want to paint the knife block a color. I think it would look weird. Maybe I could put it the phrase on whatever I find to organize the bottles, if it has room.

Move the toaster to the left side of the counter and put the vinegar/oil bottles in a colorful tray to the right of the oven. Hobby Lobby has lots of cute colorful trays. The bottles lined up behind the cooktop make it look cluttery.

I have used lanterns in the past, They have the advantage of adding bulk because of their size, but also light because of the glass panels. There are lots of styles and materials available. And they aren't necessarily very expensive.

I think if you add more stuff on top of your cabinets, and keep all the bottles down below, it's going to look very cluttered, and busy. Esp if you are using all these colors, and nothing is really in a theme.

The items you have put on the top of the cabinet are nice but the scale seems off - less but larger items might help. I know Pinterest has some diy projects for this if you can’t find the size/colors you want.
For your countertop - remove everything and add back 5 percent of what you have there. The bottles behind the stovetop look cluttered and dark. Put most of them in the cabinet to the right of your stovetop and only leave the tallest out. Put the few left out on a colorful tray to one side. Nothing behind the stovetop!!! You could maybe find a colorful print to hang behind the stovetop - use command strips to do this.
Unless you use your toaster every day - put it in a cabinet. Put the bread in a cabinet or container.
You might need to rearrange some cabinets but it looks as though you have plenty of cabinets that could hold your everyday cooking items out of sight.
You are trying to brighten and add color to your kitchen but you have blocked the light colored backsplash with dark objects.
Having your counter areas clear and clutter free will brighten up the kitchen. You can then even add a colorful glass piece or small plant.
I keep almost everything inside my cabinets. It’s so nice to have the surface area open and clear.
I don’t mean to offend but I think these suggestions will brighen your kitchen and help achieve the look I think you are going for.

We can’t put the bottles in the cabinet. They don’t fit. Most are too tall, but our cabinet is full. There is no space in any other cabinet, either. The bottles have to stay somewhere on the counters. We use them regularly. Toaster gets used every day, or most days, and even if it didn’t, our cabinets are full.There is also a toaster oven, and blender that stay out, unless we have company, for that same reason. The onlything that that might possibly help is we are getting a new washer and dryer that will have the bases, and we may be able to store a think, or two in there. Basically, the thing I’m trying to do is add color to a heavily gray room.

Actually, after discussing a few items, I was able to reduce it by half. There were also bottles sitting out that did not belong there when I took the pic. The kitchen had not been tidied up, yet. As I mentioned before, our cabinets are stuffed, including the “spice cabinet“ next to the stove. I have cleaned up a few things from the counter tonight that would fit in that cabinet, but the rest has to stay out, either due to the height of the bottle, or space in the cabinet. We have gone through the cabinets, and rearranged them several times. Due to the set up of cabinets, and the oversized appliances, they are arranged about as well as they can be, including organizing them within the cabinets. Also, not everything that was sitting on the counters actually belong there. I was not showing the entire kitchen, I was just asking for advice on the tops of the cabinets, and I had not put every back where it belongs.

My suggestion is to elevate the "eat" sign on the tallest/focus cabinet to draw the eye upward. Insert colorful scrapbook/wrapping/wallpaper (sealed with hodge podge or the like to make wiping it off easier), spray paint (with type specifically for metal surface), or vinyl inside if you wish to add a splash of color. Remove all other items from atop the cabinets.
Also consider transferring the oils from the dark bottles behind the stovetop to matching clear bottles & group them on a circular metal tray to the left of the stove. The clear bottles will visually be less heavy & the different colors of their contents will add interest/color to your kitchen. Create bottle labels, add kitchen linens, etc. using color(s) inserted in the "eat" sign, if applicable.
