I'm off to my appointment where I will finally find out the results of all of the torture from the past 3 weeks. Then I'll also find out if I need surgery in 3 weeks or if I'm off the hook. It'll be a busy morning. I knew that going in, so I made Tuscan bean stew yesterday for tonight's dinner.

Yesterday was a happy thread and I hope we'll have more happy news today.

BF is traveling today, and I don't know when he'll be home. I'm thinking about fajitas with red beans and rice.

Thinking of you, scrapmaven...hope you get good news!
I have a small lemon garlic pork tenderloin defrosting. The low(er) carb formula has been protein, sauteed veggies and sometimes brown rice or cauliflower rice. What I really want is a big polish on a poppy seed bun. We had potatoes and bread yesterday so we ought to get back on the wagon. We love food so much...why must weight issues be the bane of our existence??

Praying you are "off the hook!!!!" I went today and had training to help at our local Ronald McDonald Household sale...OMG the beautiful items that people donate that are then sold to support our two local homes--I am amazed. I took out some chicken for dinner...not sure yet what I will actually do with it though.

PolarGreen12, OMG that is hilarious but brings up horrible memories! When I turned 30, some of my friends at the bank hired a *Macho Man* to surprise me in our office. The guy they hired was supposed to look amazing but the guy that arrived was disgusting. I'll have to drag out the pictures to share. <shudder> I made Honey Butter Pork Tenderloin last night so I'm thinking salmon tonight.

Is it the weekend yet? I'm supposed to go to a wine and wool thing on Saturday and I am feeling today like I just don't want to go. No money for fun stuff. And really, it's supposed to snow tonight. I just want to hibernate.

cadoodlebug, I'd love your recipe for the honey butter pork tenderloin. That sounds like something my family would enjoy. Here you go: Honey Butter Pork Tenderloin - food.com 4 tbs butter 2 tbs honey 1 1/2 pounds pork tenderloin, trimmed 1/2 tsp Cajun seasoning 1/2 tsp black pepper 3/4 cup water Preheat oven to 375 degrees. In an ovenproof pot, heat butter and honey over medium heat until melted. Sprinkle pork tenderloin with Cajun seasoning and black pepper. Brown each side for 5 minutes in the honey butter. Lower heat if honey begins to burn. Place pot in oven and roast uncovered for 15 - 20 minutes*. Remove pot from oven and transfer the pork to a plate. Cover with foil. Add water to the pot and stir over medium heat. Simmer for about 5 minutes, until sauce is reduced slightly. Slice pork on the diagonal and drizzle sauce over top to serve. *NOTE: May need to cook longer depending on the size and thickness of the pork tenderloin.

We’re having haddock at my house. I have no idea what the sides will be.
Hate to be the downer on the thread but today’s a day of very odd emotions for me. My dgd is at my exe’s for his first try at daycare because of a big mess with the plan dd was assured was in place. She’s spending the night and I have to hide my feelings about this. He has many health issues but ds is there, probably sleeping, if he’s needed. And my ex FIL passed away yesterday. He was a bad man (ex’s stepfather) and it’s bringing up a lot of anger for me. Dd is grieving for her Nana all over again. She was an amazing woman.

Dd#2 has to stay at school late so she will miss dinner ... no idea if dd#1 will eat ... I guess it depends if she likes what I make I'm not motivated to cook so all I've got for an idea right now is something with chicken I'll be leaving to volunteer with the kitties in a few minutes so I'll decide on dinner while I'm there I guess I hope you don't have to have surgery scrapmaven ! scrapmaven crossing my fingers that all goes well and no surgery is needed. Not sure what will be on the menu tonight, Dad and DH have a meeting at church and they usually serve food there. Update on the new scone recipe I tried yesterday: one word, AMAZING!! I think Paul Hollywood would have approved; great bake, nice crumb, no soggy bottom. I can't wait for the kids to come home for Thanksgiving break. I want to try this technique with other flavors, namely blueberry scones with a pineapple glaze (I would prefer lemon, but DH is not a fan, so I may have to try 2 separate toppings).
