I do love cookies, and I have never had any as good as these. They are simply the best. My teammate's boyfriend made them and we all begged her to have him make them again and then we all got the recipe. I made them yesterday for my kids and was missing one ingredient (dang flaky salt) and I saw that made a difference (I would not ignore that!), but they were still nearly the best ever. I used all dark brown sugar, but otherwise, followed the recipe exactly. It took a long time for the butter to cool. I may sound like I'm kidding, but I am not. Go make these cookies today and everyone will love you just a little bit more. Here is the recipe: INGREDIENTS 1 cup (2 sticks) unsalted butter 2 cups all-purpose flour 1 teaspoon baking soda ¾ teaspoon kosher salt 1 cup (packed) dark brown sugar ⅓ cup granulated sugar 2 large eggs, room temperature 2 teaspoons vanilla extract 2 1.4-oz. chocolate toffee bars (preferably Skor), chopped into ¼-inch pieces 1½ cups chocolate wafers (disks, pistoles, fèves; preferably 72% cacao) Flaky sea salt Cook butter in a medium saucepan over medium heat, stirring often, until it foams, then browns, 5–8 minutes. Scrape into a large bowl and let cool slightly. Meanwhile, whisk flour, baking soda, and kosher salt in a medium bowl. Add brown sugar and granulated sugar to browned butter. Using an electric mixer on medium speed, beat until incorporated, about 1 minute. Add eggs and vanilla, increase mixer speed to medium-high, and beat until mixture lightens and begins to thicken, about 1 minute. Reduce mixer speed to low; add dry ingredients and beat just to combine. Mix in toffee pieces and chocolate wafers with a wooden spoon or a rubber spatula. Let dough sit at room temperature at least 30 minutes to allow the flour to hydrate. Dough will look very loose at first, but will thicken as it sits. Place a rack in middle of oven; preheat to 375°. Using a 1½-oz. ice cream scoop, portion out 10 balls of dough and place on a parchment-lined baking sheet, spacing about 3" apart (you can also form dough into ping pong–sized balls with your hands). Do not flatten; cookies will spread as they bake. Sprinkle with sea salt. Bake cookies until edges are golden brown and firm but centers are still soft, 9–11 minutes. Let cool on baking sheets 10 minutes, then transfer to a wire rack and let cool completely. Repeat with remaining dough and a fresh parchment-lined baking sheet to make 10 more cookies.

What are chocolate wafers (disks, pistoles, fèves)? I am pretty sure it is like a huge round chocolate chip, it would look like the melting discs you get at Michaels or Joann’s for coating candy but be made out of actual good chocolate.

I am pretty sure it is like a huge round chocolate chip, it would look like the melting discs you get at Michaels or Joann’s for coating candy but be made out of actual good chocolate. 72% cacao is really dark chocolate and more bitter, FYI, so that is what I would look for more than what shape it is. I would think dark chocolate bars that could be coarsely chopped into bigger chunks would be better than disks of lesser quality for something like this.

Thanks for sharing. I didn’t know they still made Skor bars! They also make Skor bits (no chocolate just toffee) that you can find in the chocolate chip section. At least here in Canada.

Thanks for sharing. I didn’t know they still made Skor bars! They also make Skor bits (no chocolate just toffee) that you can find in the chocolate chip section. At least here in Canada. They have the toffee bits here too, but they might be Heath instead of Skor. I’ve seen them at Target.

I didn’t know they still made Skor bars! Skor bars are my favorite and I have such a hard tie finding them at gas stations or convenience stores. It is really hit or miss. I love all of the toffee goodness!!!

I did find a number of on-line shops in Australia that sell them though - anywhere from $2 to $2.95 per bar.

I can’t eat any of them because of the almonds, but they look the same and seem like they are brittle inside.

The recipe does not say chop chocolate. I buy a good brand of dark chocolate (they are vegan) chips that are the traditional baking chip size. I would use something like that. However, I don't like large chunks of chocolate in my cookies so I've been know to usually chop regular size chips down to half size. When I'm not cooking vegan, I like to use the Nestle Mini Semi-Sweet chips.

The recipe does not say chop chocolate. I buy a good brand of dark chocolate (they are vegan) chips that are the traditional baking chip size. I would use something like that.
