Dh is in Sweden for two weeks, so I am on my own for dinner again tonight. I have a checken breast which I'll grill and I am making a cheesey risotto to go with it. How do you cook your risotto sueg? Just the normal way. Melt some butter and saute onions until soft (if I am using them). Toss the rice in the butter, and get it all coated, then usually a (generous) splash of white wine, depending on what I am serving it with. Then I add hot stock by the cupful, stirring each addition until it is absorbed, then adding more. This part usually takes about 20 minutes. I will add vegetables, if I'm using them, for the last 5 minutes. After it is cooked, I whisk in a generous knob of butter and then a heap of grated parmesan - I buy it by the block and grate it fresh myself.
