Even though she’s cooking for herself, it’s beneficial to have a bigger one in case she ever does want or need to cook for a group or to batch cook and then freeze in smaller portions. It’s also helpful if she wants to make things like cheesecakes, etc. where the smaller you go the harder it is to find a pan that will fit inside. You can always cook less in a big one but you can’t ever cook more in a smaller one.
I’d go for at least as 6 quart.

I have 2. The only difference for me is one has a yogurt button and the other doesn’t. If you think she will ever experiment with homemade yogurt it’s worth having that setting. Otherwise the basic model you can get at Walmart/Costco for $80 is perfect.
I would not get the mini but would definitely get a 6qt as it’s easy to scale down but the mini is super small and most recipes are written for the 6qt models.

Costco has the 7 in 1 one that has sous vide in addition to the other settings on sale for $70 through TODAY. They close at 6pm on Sunday.

I have two pressure cookers from QVC. They are the Cooks Essential brand and I've been happy with them. I like that they have nonstick pans. I gave an Instant Pot to my daughter and she likes it. I'd recommend a 6 quart.

I would get the 6 qt. duo Instant Pot. Kohls or Amazon have really good sales on these. You should be able to get one for around $50 between now and Christmas.

She can always cook smaller recipes in a big one but you can't cook big recipes in a small one. At some point she may want to fix something for a party of some sort. Also, even though it is just me, I like to cook family sized meals and repackage into serving sizes. So it easily become cook once and put the rest in the freezer. There are months I only cook once or twice that month and eat the "left overs" from earlier weeks. It is my own stash of grab and go meals.

I'd get the 6 qt Duo. I was an early IP adopter so it's what I STILL have and it's been a workhorse. I keep hoping it will die so I can justify a new fancy one, but honestly, it's great and I'd recommend it for her situation.

I have an 8 qt for our family of 5 and it is too big. Wish I'd gotten a 6 qt. Larger size = takes longer to come to pressure/release.

On the Facebook page people are always saying to go bigger, but I honestly think they don’t consider that a bigger pot will take longer to come to pressure.
I’m with the others in saying the 6 qt. Duo would be a good choice - not too big or small, most recipes are written for that size, she can easily do yogurt if she wants to, and accessories for it are easy to find (if she wants to make cheesecake or egg bites, for example).
