Our plans fell through for dinner tomorrow, so we had to do some last minute planning. DH requested banana pudding for dinner. Should I make it tonight or wait until tomorrow mid-morning? I know it needs to sit but I don’t like the bananas to get too brown.

I think they are best the day they are made.

Depends on the recipe. I make Paula Deen's and it is better the next day. The bananas don't turn brown in the pudding.

I Hite for tomorrow so the bananas will be fresh and not brown or mushy.

tomorrow = bananas not only turn brown, they get runny - or it might be they can cause the pudding to get runny. It is always best the day you make it.

We are in charge of desserts and made banana pudding tonight so it can sit overnight. If you cover the bananas completely with pudding they won’t be brown for a day or two.
