"So What's the Big Deal?" lol day 1 is full of excitement, isn't it? I'm traveling today and bringing my food - veggies, oranges, apples, banana, jerky, flavored tea. We won't stop for meals until we get to the hotel tonight and I'll see what I have for dinner. Most likely a burger, no bun. Travel can be tricky. Here's one of my favorite recipes: Greek Potatoes with Crispy Greek Chicken Thighs

Are there vegetarian options? Just a cursory look shows that they don't want you to consume beans or legumes, including peanutbutter!!

Whole30 is an elimination protocol, not a permanent way of eating, it is meant to help you discover how what you eat impacts your health. There is a vegetarian Whole30 template. A vegan one too. It emphasizes sources of protein that are less likely to trigger inflammation. I imagine there is a lot of overlap between whole30 vegetarian and WFPB although the approach to fat sources And grains will be different.

Fruit this morning. I couldn't do meal prep yesterday, roommate was having a party and the fridge was required for leftovers. It's going to make the next two days a little rough but I plan to pop over to the grocery store to get salad stuff and compliant dressing. I'll do a big meal prep this weekend.
There is supposed to be a group of us at work doing this, but two have bailed and I think the rest aren't starting until the 6th. This is my third round. I eat whole 30 about 80% of the time but have eaten my body weight in chocolate recently and am heading down the path of not eating better. Hopefully this will get me back on track.

Happy day one I’m sipping my morning cup of tea, I swapped out my coffee last month because of my love of flavored creamer. I also made a couple of scrambled eggs with bell peppers and zucchini. Breakfast is my easiest meal of the day because I like loading my eggs with veggies.

I had a recipe and now I just dump stuff into a bowl and cover with almond or coconut milk. Usually its a grab of slivered almonds, a handful of shredded coconut, tablespoon or two of chia seeds and some pumpkin seeds. Top with almond or coconut milk and warm in the microwave for 45 seconds. Then add a fruit- 1 or 2 chopped up dates or blueberries or banana. Lastly, a tablespoon of almond butter or mixed nut butter. It sounds weird but it's very yummy
