and since the Ps know all....
I want to get a fresh unbaked pizza, but not cook it that day, but save it for the next day. I feel like if I leave it in the fridge overnight it will dry out, and not be as good. Has anyone par-baked them? and or how long? and then completely baked them the next day?
The reason for the wait is that I will be in town the day before, but not the day I want to use it, and I don't want to drive 30 mins in to town just to get a pizza, and have to wait til 4pm when they open.

I think as long as it's covered or boxed or something, it will be fine for a day.

I’ve done this before. They had it wrapped in Saran Wrap type stuff. Tasted the same as if it was immediately baked.

If it's wrapped in cling film - I think you call it saran wrap - it will be fine. I've kept unbaked in the fridge for maybe two days.

It will be 100% fine and it will not dry out. Especially Papa Murphy’s - but any others, just wrap it up and it will keep.

It's not papa murphys, but a small hometown pizza place. They usually just put it in a box, not wrapped, but I could wrap it when I get home!

We had a Papa Murphy’s unbaked pizza in our fridge wrapped up in Saran Wrap for three days before we baked it and it was perfectly fine. If it wasn’t wrapped up like that from the place, I’d wrap it up that way myself.

I’d wrap it in cling film. I think a box would let in too much air and a skim would form on the crust, affecting the rise. Otherwise, it’s all good.

back in the 80s my first job was at a Papa Murphy's style pizza place. We sold the previous day's unsold pizzas at a discount, so it's fine in the fridge overnight. When I'd take them home you couldn't tell the difference.
