Back in the day---my sister brought home a recipe from Home Economics class that featured condensed tomato soup. We loved it and it is a staple with my siblings. Married DH and his family loved it also. Here is a rough version of the recipe: 1-2 lbs ground beef (90% lean) 1 onion, chopped well 1 bell pepper, chopped well (size of bell pepper means it may be 1/2 pepper) 1 egg beaten about 1/2 can tomato soup bread crumbs -enough to make the loaf form. Can substitute crushed saltine crackers 2 tsp worchestershire sauce Mix all well and bake Topping 1/2 can tomato soup some dried onion some slivers of bell pepper (chopped very fine) 1 tsp worchestershire sauce simmer that and then use it to top the meat loaf

I remember an easy salsa meatloaf that I made from a Kraft food and family recipe. This is the closest recipe I could find, but this seems more complex than what I remember. www.kraftcanada.com/recipes/cheesy-salsa-mini-meatloaves-158768I remember using salsa to replace many of the ingredients, and I don’t like onion, so I can’t imagine adding extra onion. Cheese on top is always a good thing too!

My niece gave me this recipe and DH declared it was the best meatloaf he ever ate.
Meat Loaf
1-1/2 lbs lean ground beef 1/2 cup crushed Ritz crackers 3/4 cup shredded cheddar cheese 1 pkg dry onion soup mix (1 oz) 2 eggs, beaten 1/4 cup ketchup 2 Tbsp steak sauce (we use Heinz 57 but you can use A1 types too, depends on what you like)
Directions: Preheat oven to 350° F. In a large bowl, stir together ground beef, crushed crackers, cheddar cheese and onion soup mix until well combined. In a separate bowl, stir together eggs, ketchup and steak sauce until smooth. Stir the egg mixture into the beef mixture, adding a little water if necessary. Shape into a loaf and place in a 9x5 loaf pan. Bake in preheated oven 45-60 minutes until no longer pink. Serves 6.
My notes: I discovered that the soup mix rehydrates better if it’s mixed in with the eggs and liquid-ish stuff better than with the meat, crackers and cheese. Instead of mixing it in a big bowl, I mix it all in a gallon ziplock bag, it’s so much less messy. I also bake it either divided into muffin tins or in a flatter loaf shape in a 9x13 pan so it takes less time to cook through. You don’t need any ketchup or anything on top because with all this stuff mixed right into it, it kind of makes its own sauce.

I follow a Cracker Barrel Meatloaf Recipe though I have looked online and fine more than one version. I follow this one with the exception of the shredded cheese, I don't include it.
Cracker Barrel Meatloaf
Ingredients 2 pounds lean ground beef 1 small finely diced onion 1/2 cup finely diced bell pepper (optional) 1 1/2 sleeves of crushed Ritz crackers 4 oz. shredded sharp cheddar or Colby cheese 3 eggs 1/2 cup milk 1 tsp. salt 1/4 tsp. black pepper For the topping: 1/2 to 3/4 cup ketchup 2 tbsp. brown sugar 1 tsp. mustard
Instructions 1. Preheat oven to 350 degrees Fahrenheit. 2. In a small bowl, combine the ketchup, brown sugar, and mustard. Place to the side. This will be used later as the topping. 3. In a large bowl, combine the eggs, crushed Ritz crackers, cheese, milk, onion, bell pepper, salt and black pepper. Mix well. 4. Add in the ground beef. Mix well just to combine. Do not over mix. 5. Form into a loaf and place inside a baking pan or baking sheet lined with foil or parchment paper. 6. Bake at 350 degrees Fahrenheit for 30 minutes. 7. Remove from the oven and spread the topping over the meatloaf. 8. Bake for an additional 30 to 40 minutes or until the center is 160 degrees Fahrenheit. 9. Let it cool for 15 minutes before serving.

I am not a fan, but my DH and DS love it. I can tolerate the Pioneer Woman's meatloaf recipe when dh wants it.
