DH wants meatloaf. I've only made it twice in the past 20 years as I'm not a fan. Every time I search pinterest for a recipe, I get overwhelmed. He said the last one was okay, but I feel I can do better. I am also open to good recipes for mini meatloaf cooked in muffin tins.
I'm not a fan of the ketchup on top, but I think he may be okay with it.

My favorite recipe:
3/4 lbs lean ground sirloin 6 ozs lean ground pork 6 ozs lean ground veal 1 cup milk 1 egg 1 cup bread crumbs (I like seasoned) 2 TBSP ketchup 2 TBSP mustard 1 1/4 tsp salt 1/2 tsp pepper
Mix all. Shape in pan. Bake 1 hour or until temp is 155. Let stand 10 minutes.

Mine is simple: to about a pound of burger, I add a med. minced onion, a beaten egg, a tsp of Worcestershire, a c. of quick oats, and S & P.
I use oats instead of bread crumbs because I can't eat gluten.

You don’t need ketchup on top.
The part to get right is how bread crumbs to add. Breadcrumbs lighten up the meat, but not so much to make it not meaty. But then again, meatloaf was a way to stretch a pound of ground meat to feed a family.
I use lamb in my meatloaf. So much better than ground beef.

I make this one BBQ meat loafThen top it with DH's moms sauce which is ketchup, Worcestershire, and dry mustard. I find that the stuffing mix instead of the oats or breadcrumbs makes it stick together but isn't mealy. Also the seasoning from the stuffing elevates it. My kids even eat it with the BBQ sauce which is just about the only sauce they'll eat and then it's sparingly. Make it in tiny patties for faster cooking.

I put V8 juice in my meatloaf and it's always moist. I don't really follow a recipe, I just use ground beef, an egg, package of beefy onion soup mix, bread crumbs and Worcestershire sauce.

BEST meatloaf I've ever had, same with anyone who has had it I used to double the recipe to make 2, then individually slice and wrap each piece and freeze. Reheats really well for a quick entree on those "on the go" kind of evenings! Mama’s Meatloaf 2T olive oil 1 C each finely chopped onion and celery 3 cloves garlic, minced 1t Italian herbs (I just use oregano) 1 C marinara ½ C chopped Italian parsley 1/3 C chopped fresh basil 1/3C breadcrumbs (I have never used them) 1 ½ lb ground chuck (ground beef) ½ lb ground sausage (my market carries a mix of ground veal, ground chuck and sausage, so I just use 2 pounds total of that) Salt and pepper to taste 1. Heat oil in a skillet over low heat. Add onion, celery, garlic and Italian seasoning. Cook, covered, stirring occasionally, for 15 minutes. Remove to a bowl and cool to room temperature. Preheat oven to 350 degrees. 2. Add marinara, parsley, basil and breadcrumbs into cooked mixture. Break up meat into the mixture, season with salt and pepper, and gently toss together. Do not over mix. 3. Lightly grease a loaf pan, Pack in meat mixture. * optional, place 4 slices of uncooked bacon across the top. Bake for 55 minutes or until internal temperature reaches 150 degrees. Do not overcook or meatloaf will be dry. 4. Remove from oven; let rest 5 minutes. Pour off any pan liquid and invert onto a plate. Let rest 10 minutes before slicing

I don't use a recipe, just toss everything together. One thing that is constant is I don't just use ground beef, I always add another ground meat, turkey, pork or my favorite, Italian sausage.
Be sparing with the bread crumbs. Or you can also soak a slice of bread in a small amount of milk and use that instead.
I always add finely chopped garlic, onions and peppers. Also a good glug of worchestershire (I know, spelling, LOL) and a squirt of Sriracha.
Lastly, bacon. Bacon makes everything better. Either chop it up and mix in the meat or lay strips along the top as a roof.
Another helpful hint, I learned to make meatloaf and it was baked in a loaf pan. It wasn't until several years ago I saw on a cooking show that it is better to bake it on a rack that is set on a baking sheet or in a cast iron skillet so it doesn't sit in all of the grease.
If you don't like the ketchup on top, come up with a glaze with a flavor profile that you like. We make ours with ketchup, honey, and Sriracha or maybe a squirt of BBQ sauce.
If course, now I want meatloaf. Thanks for that, LOL.

Mine calls for tomato sauce instead of milk. A1 not Heinz but I think Heinz would be good too. I've never found anyone who doesn't like it. Including my 8 yo grandson who hates everything and always tells me he doesn't like meatloaf then eats the whole thing. .

I usually use the meatloaf mix spice package and just increase the amount of breadcrumbs but I'm glad to see some "real" recipes that people like!

I love meat loaf - I use half ground beef and half Italian sausage, stale bread soaked in milk, grated carrots etc. my favorite recipe is Christy Tiegans spicy meatloaf. And I like ketchup baked on top.

I make meatloaf every 2-3 years because it sounds like a good idea. It really just reminds all of us how much we dont like meatloaf!

My basic recipe: - 3 pounds ground meat (combination of beef/turkey/lamb is family favorite)
- 3 eggs
- 3/4 cup seasoned bread crumbs
- 3/4 cup finely diced onions (I use mini food processor to almost liquify)
- 3 cloves crushed garlic
- 3 TBSP Worcestershire sauce
- 1 1/2 TBSP dry mustard
- 1 1/2 tsp salt
- 3/4 tsp pepper
Blend all ingredients and split evenly between 3 meatloaf pans. Bake at 350ºF for 40-45 minutes. Rest for 10 minutes, slice and serve. FWIW, I've only made muffin tin/individual meatloaf once because no one was a fan in my family. They would rather I froze individual slices from the big meatloaf for future use than make the muffin size again.

DH and I love meatloaf. I never make it in a loaf pan though. All my recipes call for baking on a sheet pan. I don't have one favorite, I have 4-5 recipes we have tried and liked and I pick one based on which one uses the most ingredients I already have on hand.

I have a recipe that I used for years and was well liked by everyone but then I found this Cheddar Meatloaf recipe from Budget Bytes and it was a big hit. It's now my go to - the glaze on top is very yummy!
