Ketchup, oats, onion, all beef, salt and pepper, one egg, and milk to add moisture baked on a lined broiler pan so it doesn't sit in any grease. Sounds super gross, but it's light and so juicy... makes great meatloaf sandwiches for leftovers.

No ketchup
I use a mixture of ground turkey, ground beef, and finely diced mushrooms.
Then I use lipton french onions soup mix egg and some fresh bread crumbs.
It is so yummy.
With thanksgiving up I make Holiday Meatloaf... ground turkey mixed with leftover, turkey, stuffing, potatoes and cranberries. I serve it with the left over gravy. Every year its a bit different but OMG its sooo good!

Lots of brown gravy but that is because the only way we eat meatloaf is as a hot meatloaf sandwich with mashed potatoes. Two big pieces of good bread with a slab of meatloaf on top with mashed potatoes and all of it covered with lots if brown gravy. Yum. Now that I'm thinking about it I'm going to put it on the menu.

I put some Shake and Bake Extra Crunchy in some milk, let it soak for a couple of minutes, then throw it in the mix. It keeps it from drying out and adds some flavor.I put a layer of dark brown sugar and a layer of ketchup on top during the last 15 minutes of cooking. It makes a good topping.

I guess mine would be considered tomato based, but I don't slather a thick tomato sauce layer on top. I mix about 6oz of tomato paste with eggs, onions, celery, spices, bread crumbs, beef stock, and ground turkey. Then I add a layer of spinach in the middle.

I make a sauce with ketchup, mustard, brown sugar and garlic. I smother it all over the top before I bake.

I make mine with an Italian meatball recipe and then cover it in ketchup. It's the only way my un-cultured brood will eat it. *sigh*

I either make a Cottage style meatloaf which is very moist or a cheeseburger meatloaf which is rolled with cheese in the middle. I don't usually put anything on either while they are cooking, but I let the family know they are welcome to top their slices with whatever, usually ketchup. I use really lean beef, so there are no drippings for gravy, nor would I want any.
A couple of weeks ago, I tried something different with a cottage meatloaf I had in the freezer. I realized the frozen loaf would fit perfectly in one of my small crockpots, so I added a bit of homemade spaghetti sauce to the bottom of the crock to keep the frozen meat from sitting directly on the bottom. The seasoning in the meatloaf was a bit light, but the seasoning in the sauce was stronger and the two combined to make meatloaf heaven. LOL I cooked the frozen meatloaf on low for six hours and it was so juicy.
I have 3 more meat loaves the same size and I'm going to cook them the same way. I have sauce in the freezer frozen in portions large enough to use as pizza sauce for Friday night's Pizza Night makings, with enough left over to cover the bottom of the crock for Sunday dinner. DH will think he's died and gone to heaven.

I cannot stand tomato-based stuff--soups, roasts, or whatever else has tomato as a base. Tomato based. You mean like ketchup? ![(rofl)](//storage.proboards.com/forum/images/smiley/rofl.png) No gravy on my meatloaf: onion soup mix, egg, breadcrumbs, worcestershire sauce. And ketchup on the side. Good point! ![:D](//storage.proboards.com/forum/images/smiley/grin.png) I guess I think a little ketchup mixed with brown sugar, and baked on top as different than a tomato soup, or something similar. ![(rofl)](//storage.proboards.com/forum/images/smiley/rofl.png)

Am I really the only redneck the board who grew up with cream of mushroom soup on top of the meatloaf? ![](//storage.proboards.com/5645536/images/Ivm7lm0DayrhoRpwvCeH.jpg)

I make a sauce with ketchup, mustard, brown sugar and garlic. I smother it all over the top before I bake. This is my topping, too, except the garlic. The meatloaf itself is made with beef, oatmeal, egg, milk, dried onions. I once made it without the sauce and my family harrassed me like crazy. As the meal went on, I jokingly said, "If one more person says anything about the sauce, I'm going to throw these egg noodles at them." Someone did and I sent a spoonful of noodles across the table. Kids were SHOCKED that I actually did it. It's now become a legendary family story.
