I’ve decided to pull out some special holiday dishes/recipes to help make staying at home and not eating out more fun. I just assembled a Christmas Breakfast Casserole to sit in the fridge all day and cook for dinner tonight.
Yesterday, I pulled the leftover sausage balls (from Christmas) from the freezer and we had those for lunch.
I have a turkey in the freezer - I always buy 2-3 at Thanksgiving when they are on sale. This is the one that is left. I’ll defrost later this week and I’ll roast it next week. I have the fixings to make green bean casserole and mashed potatoes to go along with it. The family will have to live without sweet potatoes though.
What fun recipes/dishes are you making this week?

Not a recipe but someone on FB suggested we all hang our Christmas lights up again!! I thought about that! A neighbor behind us still has lights on a screen porch. It's so cheerful.

Not a recipe, but someone on Next Door suggested putting Easter eggs in your window, so parents can drive around and the kids could have an Easter egg hunt!

I was thinking about this the other day. During the Olympics I usually do meals from different countries every night, it’s become my thing. I was musing that if they are shut down, we do a different holiday theme instead.

I've made: chicken thighs with roasted potatoes and parmesan zucchini fries spaghetti with meat sauce and today will be deep fried turkey breast (from the freezer), Stove top stuffing and gravy and brussel sprouts. YUM!

College freshman DD made chicken and veggie fried rice for all of us for dinner last night. It was good! It's so nice to have her home and also nice that she's picked up some cooking skills while living on her own.
I think I'm going to do quinoa buddha bowls tonight - I have some brussels sprouts and beets from the farmers market I want to roast and use, plus broccoli and carrots for the kids who won't eat the "weird" veggies. LOL Quinoa is pretty high in protein but might also put out some beans for those who want them (ETA - no, wait, I have some leftover cooked chicken - the protein lovers can eat that). We had asian flavors last night so I might make a lemon-tahini sauce to top it off, for something different.

We have a turkey in freezer too. That might be a good thing to pull out over the weekend. Yep, I'm still working in the office full time - retired DH is practicing social distancing and rocking it.

I too am thinking of making a turkey. I initially dismissed the idea because I don't have the fridge space to thaw mine in, but then I realized that I could take it with me to work (church secretary) and use one of those fridges. My only other concern would be having white bread & milk at the right time to make the stuffing because our turkeys are mainly used a cooking vessel for our stuffing!

I made a big ham on Sunday and we've had scrambled eggs with ham & hot ham and cheese sandwiches with the leftovers. It was probably the best ham I've ever had (and definitely the most expensive since DH bought it).

I too have a November turkey in the freezer, and was thinking I’d cook it soon. I was also thinking about hitting the HoneyBaked store (if they’re still open) and getting a few slices of ham. I have ham stock but no actual ham in my freezer, and I want to make split pea or mixed bean soup ... I think I have both in the pantry. Both my sister and I have baked this week. I think a lot of us are feeling the need to nest a bit.

I did my meal planning last week before I realized that everything was going to shut down like it has, and all three recipes were new. I'm feeling like that was a mistake. None of the recipes went really bad, but they weren't big hits, either. I realized that I need comfort food for all of us. I'm just going to make the tried-and-true stuff that I know everybody likes.
