We bought a two pack at Costco almost two weeks ago because it had an insanely long expiration date. We’ve used most of one just crumbling it on salads/pasta. I’d like to do something different with the other log.

I like rolling it in fresh dill or finely chopped pistachios and eating with crackers. It is also good with fig preserves if you have that hanging out in your pantry. I like adding it to piping hot pizza after it comes out of the oven.

Breakfast pizza.
We used naan, cream cheese/ with blu cheese mixed in as the sauce. Feta cheese, bacon, sausage. Make a well to put an egg in
Bake until the egg is done.

On flat bread with thin red onions and artichoke hearts, just lightly heated in the oven.
I also love it on pizza.

My favorite way to use goat cheese is to not use goat cheese. There is this flavor to it that I just can't stomach! Someone once told me I needed to eat good goat cheese. Well, folks, i've had the good stuff and still yucky to me!

We like to use bone in, skin on chicken breasts, spread pesto between the skin & meat, then slide a piece of goat cheese under the skin and roast it.
SO yummy!

I freaking love goat cheese. LOVE IT!
When I was pregnant with Ds I craved it so badly I was breaking down in tears. I sobbed thru an OB appt and the Dr have in and told me to eat it sparingly and to not tell him about. Yeah, I ate goat cheese everyday for my last 5 months of pregnancy. Ds is fine other than some long floppy ears and a tendency to call his dad, daaaaaaaaaaddy.

We just had Goat Cheese Grits last night from Brennan's. Awesome! And that's coming from someone who isn't the biggest grits fan. I'll see if I can find a recipe.

Sometimes when I made baked Greek shrimp with tomatoes and feta, I’ll substitute goat cheese for the feta instead.
Other thoughts — - oven-fried goat cheese rounds on top of salad greens - whipped, with herbs as a spread - baked in phyllo dough

I make it into two inch patty shaped dip in flour and egg and then panko/breadcrumbs seasoned with salt, garlic and rosemary and then pan fry till panko is crispy and golden.
In a small oven pan pour in your favorite jar of marinara place goat cheese in the middle. Bake at 325 till melty. Dip crusty bread in it.

I once had it like this in a pear salad at a really nice restaurant in Chicago. The pieces were smaller, but oh so good. It's also wonderful on a grilled chicken sandwich or a burger.

I got this recipe off the back of a package of Hy-Vee tri-blend quinoa.
Cook the quinoa. Sauté about 1/4 cup shallots. Add some chopped up asparagus and cook for about 5 min, add chopped up Roma tomatoes (2) to pan. Then add 3/4 cup cream and 3 Tbsp. Basil pesto cook for a minute and take off heat. Mix veggies and quinoa and place in 8x8 dish. Crumble goat cheese all over the top. Pop in the oven (325) and heat through, maybe 15 minutes over until goat chees is all melts and starts to brown.
We never have leftovers of this.
Original recipe called for mushrooms but we don’t like those. You can also add pine nuts.
