With the various threads about yeast (the lack thereof in stores) and then making your own yeast/sourdough starter, has anyone else made their own?
Since bread is apparently the new hobby to entertain my boys during the stay-at-home era, we used the King Arthur Flour recipe for making a sourdough starter (uses only flour and water). It was finally ready today - after 8 days. It has been quite the science experiment. It was overflowing the quart Ball jar I was keeping it in this morning.
So, we have a loaf of sourdough going in the bread machine now. Using our starter. The boys (and I) can’t wait to see how it turns out. I also have a recipe for sourdough waffles/pancakes that we may try soon.
So, who else has made their own starter? Have you baked with it yet? How did it turn out?

Husband made a starter a few weeks back. We’ve made a loaf every 3 days. It just keeps getting better and better! So good! Lots of holes in the most recent loaf.

My dd and I got as far as watching the video of how to get it started and when it said the house had to be at 70 degrees we stopped. It is a cold spring here and our house is never at 70 degrees. After watching the entire video it seemed a bit too much work for us. Yes we are being lazy LOL. Also there is lots of bread at our stores so that probably helped the lack of motivation.
I do love homemade bread though and can't wait to hear how delicious it is.

Our house varies between 62 at night and 68 during the day. I just keep the jar on top of the freezer and the little extra heat from the appliance is all it needed. So, you don’t have to really keep your house that warm. But, it is a little bit of work. Here, that is a plus because it is something else for the boys to help with. Fun chores are a good thing in our house, but if I didn’t have kids to entertain, I’d probably not go through the hassle. Although sourdough is my all-time favorite flavor bread, so I’ve been wanting to do this for over a decade now.

My hubby does. And there are tons of recipes out there that use the discards from the feedings.
I think King Arthur has one for scallion pancakes. OMG. SO good

Not yet, but it is on the list!
Middle DD moves home next weekend (26th) and she wants to learn to bake. She has no problems cooking but baking is her stuggle so we are going to play.
And sourdough is on her list, so we will wait until she is home and get a starter going then, and it will be her job to keep it living!

Yes but the loaf we made came out pretty flat. It's been cold so we were concerned that it may have gotten too cold. We're still feeding and caring for the starter and will try again. We're currently taking a course on Universalclass.com called Breadmaking 101. Our library is offering access to a lot of classes for free. I'm going to do landscaping, gardening, pie making, Italian cooking, and probably more!

There's an IG user called WORDLOAF that has been teaching people to make a tiny starter from just flour and water. Fits in a pint jar. He was trying to do it in a way that didn't use a ton of flour since flour is at a premium right now. My starter is ready, but now I'm overwhelmed with what to do with it! LOL I just keep feeding it once a day now.

I did. I put it in the fridge so it doesn't have to be fed so often because I don't want to use all my flour. I made biscuits with it a few times, they were edible but not great. Maybe it needs to age...

Maybe it needs to age... I think that before you put it in the fridge, you have to let it really get going and establish itself. I fed mine 1 cup of flour last night before bed (there was 1/2 cup starter in it) and by this morning it had pushing the cover off of the top of the quart ball jar and threatening to spill over the side. That was how I knew it was ready. After taking enough to make my bread, I moved 1/2 cup of the leftover starter to a fresh Ball jar, fed it 1 cup of flour and after 2 hours it doubled in size and I moved it to the fridge where it sit until I need to bake with it. It still will need to be fed weekly and will need to be allowed to come to room temp before baking with it. I think that they do supposedly get more tasty with aging.

There are other methods that use smaller amounts of flour or incorporate fruit into the mixture for more yeast that may use smaller amounts. I didn’t want to use fruit, so went with King Arthur’s recipe. It is a lot of flour and if my TJs didn’t have plenty of flour, so that I could buy two bags, I probably wouldn’t have done it.

Thanks for the info!! I have one precious bag of flour left. I think I will wait until I can get more before I try this.

i am making one that uses sugar and potato flakes to feed. 11 cups would be most of a 5 lb. bag!
