Good morning. My dinner plan will likely depend upon dh fixing the sink. We had a major clog yesterday and dh fixed it, but we need a piece that he'll have to get from HD today. Dinner was going to be grilled chicken sandwiches, but it might change to a pasta dish. I'll see what dh has planned for his evening.
What's on your menu?
Here's a different question: What is your favorite cookbook and why? I love anything from America's Test Kitchen, because their recipes always turn out perfectly. They break cooking down to a science and you get lots of tips and techniques. What about you?

Our dinner tonight will be chicken fajitas.
I don’t really have one favourite cookbook - we tend more to look online. When I was in Australia, the Women’s Weekly magazine had a series of magazine style cookbooks, each with a theme: Chinese, Italian, BBQ, etc. I had quite a collection, but I didn’t bring them with me, which I now regret.

Not sure about dinner. I have plenty of rechauffe to feed myself, but also took some chicken breasts out of the freezer so I can make something TBD to take to my mom tomorrow. So maybe that (whatever that may be) instead.
I like ATK, too, but they pissed me off right from the start by saying on their TV show “recipes are available on our web site” but then it turned out you had to have a paid subscription to access them. I do have a giant book of their recipes, but that graspiness has always colored my opinion of them.
I love Pioneer Woman for her recipes and her personality and her adorable family and her business smarts and her ranch photos. I am a groupie.

Ugh, another day to think about what to make for dinner. I have plenty to choose from, now it's time to make a decision. Maybe a Mexican lasagna. Hmmmm I used to have cookbooks, but when I left XH, I left them there. The one close to my heart is Betty Crocker because that is what my Mom used. Otherwise, I search the net and find a recipe I like (which is what I will do for a Mexican lasagna!).

lucyg, I'm also a PW groupie. I love her recipes, too. I am a premium member of ATK, but I use the whole website. I rely on their reviews when I buy something new for the kitchen.

We are trying to recreate dh’s mother’s shredded turkey pasta salad tonight. She never used a recipe for it and we are trying to remember what colors and flavors were in it. Our memories don’t go back 30 years in a detailed way. It’s her dressing that has stymied us. I have to make bread, too.
Art of the Pie for wallowing in over and over. And oldies, but goodies, River Roads books (Cajun).
Thanks for the thread.

A pot roast went in the crock pot this morning and already smells delicious. Hopefully, DH will get a couple meals out of that.
I went on a 3 mile walk this morning. We are in the sweet spot of weather for Georgia. Warm and sunny and no humidity; these days won't last long. The humidity usually begins in early May.
Reading and doing laundry until my virtual faculty meeting this afternoon.
I gave away all my cookbooks several years back. I keep a small binder with family favorite recipes.

desertgirl , turkey pasta sounds really good. If you figure out the dressing recipe would you please share it? I miss salads of any kind more than anything.
tuesdaysgone, enjoy your healthy walk. I was debating about trying a short walk today, as well, but I think I'll wait one more day. Enjoy the beauty.

Happy Monday ladies!
I don't know what's for dinner here, I'm thinking shrimp or ground beef something. maybe nachos. I am thawing a turkey for later in the week so that I can refreeze the leftovers.
Pinterest is my go to for recipes, but the cookbook I pull out most is the Magnolia Table cookbook, I want to order the 2nd volume.
Have a great day everyone!

Hi Everyone!
I have lots of cookbooks. But not a favorite. I also love PW. Including her recipes, dishes, towels, etc.
Last night we had Chicken Enchiladas, rice and green beans. That is gone. But I cooked enough chicken for chicken salad sandwiches and for salads.
I have to go look in the freezer for a protein, but we are having more green beans and corn on the cob.
I am keeping all of you in my thoughts and prayers.

We're having swiss chicken casserole. I might be adventurous change it up and use pepper jack cheese instead of swiss.

I love Pioneer Woman for her recipes and her personality and her adorable family and her business smarts and her ranch photos. I am a groupie. I was going to log in to say basically the same as lucyg. My mom saw something years ago and wanted the recipe on ATK and my dad couldn't get it for her. I told her I would, and couldn't. So I never went back or watched after that. I guess I'm still holding a grudge! lol I also love Pioneer Woman cookbooks. I have her first one that was autographed for me that my BFF picked up for me in Dallas. I'm a groupie, too. When I first started scrapbooking, I found 2 Peas and Pioneer Woman the very same week (I remember because DH was visiting DD in CA and I had a horrible migraine, turned on QVC and ordered my first scrapbook stuff - that was never used, btw and needed to figure out how to use it) and have been hooked on both ever since. Well, I no longer scrap. We went to the Merc and Lodge in February just before all of this started. DH surprised me. Loved it and P-Town Pizza. Dinner tonight will be good old shake n bake pork chops, butternut squash (Kroger pick-up gave me a huge $9.00 squash!), cole slaw and my neighbor gave me 2 huge, beautiful artichokes this morning. I haven't cooked them in about 25 years or so. Will either roast or instant pot them probably. I don't have any fresh lemons but have bottled lemon juice I will use so that they don't turn brown. Then, DH wanted Apple Dews, so that will be dessert with a little ice cream. Huge splurge for us on the sweets. I hope everyone has a really good day today. We are one day closer to making it through this and to living our new normal. What ever that may be. Hugs to everyone!

I used to have a lot of cookbooks but have donated most to the library. It seems like I have a few favorite recipes from various cookbooks. I mostly cut recipes out of magazines and the newspaper. I also use recipes people recommend on these threads.
I think I'm making a Costco run after lunch ~ I need a bunch of things and will likely buy a rotisserie chicken to make chicken divan.

I made chicken and dressing with a side of broccoli last night, we will probably have leftovers tonight with some sugar snap peas if they are still good. I forgot I had them! I love cookbooks! lucyg I had the same reaction to ATK recipes being online. I even emailed them, they said only the current year were free. I ended up getting one of their cookbooks too, that alone should let me have everything online, it was expensive! When we downsized to our condo, I had to get rid of a lot of cookbooks. A lot of books in general had to go. We probably got rid of 1000 books. That was hard!

No favorite cookbook here either as I just search or come across things online.
Tonight is a miso salad with orange chicken and crab rangoon.

Rechauffe smorgasbord here tonight -- lots of little dibs and dabs in containers in the fridge will be eaten tonight, or else.
I grew up cooking from mom's Betty Crocker cookbook -- I found it online after one of my brothers "borrowed" it and lost it. I use my Fannie Farmer cook book as a reference, as well as an old copy of the Joy of Cooking (I think that's the name). But mostly these days, I'm cooking from the newspaper recipes, or something I see on Trisha Yearwood's show on Food Network. Trisha's potato salad recipe with bleu cheese changed my life!
ETA: Trisha's recipe was COLE SLAW with bleu cheese, not potato salad! Gah.

ATK, Cook's Country and Cook's Illustrated are my favorite cookbooks. I agree about the website, but my mom has the online membership and I use it often.
Dinner tonight is leftover Taco Stuffed Shells - they were a hit last night and I changed the recipe enough to get extras.

I'm another cook without a lot of cookbooks these days. I love to get them from the library and will throw a few on Christmas/birthday lists. This year Forks Over Knives is my favorite and most used. Joy of Cooking and Classic Cooking Step-by-Step by Moyra Fraser are my reference books and all of Anne Lindsay Lighthearted cookbooks have survived many purges over the years as I've been using them since the early 90s. Anne Lindsay is the former nutrition editor for Canadian Living magazine and has a series of fabulous, easy and tasty heart healthy cookbooks. Today I'm making mix and match pasta and meatballs. Spaghetti squash, rotini, meatballs and lentil/tomato/spinach sauce will be on the buffet line.

Hi ladies! I hope you all had a wonderful weekend. It's rainy and gloomy here... and it's supposed to be that way most of the week unfortunately. It's vacation week for my kids and we can't even spend it outside.
Our new septic design drawings were done today so dh approved them and they were sent to the state for approval. Once the state approves them our excavation company can get started. He's still 2-3 weeks out though.
Dinner this weekend was takeout Chinese on Saturday and yesterday was a frozen lasagna. So I'm actually cooking today. Sauteed chicken, oven roasted new potatoes, and green beans with onion, garlic, and bacon.
I see IKEA released their meatballs recipe so I think I'm going to give that a try this week since the weather is supposed to be cool. Ds's bday is next week so he wants olive garden take out. But he asked for a Texas sheet cake for his bday cake. Thankfully I got a grocery order yesterday with the stuff I needed for that.
Have a great day and week ladies!!

Oh and as far as cookbooks? I don't really use cookbooks. When my dh and I got married, one of our wedding gifts was a cookbook my dad put together. He spent months gathering recipes from the family, typing them up on their 1999 era Packard Bell computer, printing them out after adding clip art. He put them in page protectors and into a binder. I don't use it often but it's still one of my favorite things ever. My dad died less than 2 years after we were married.

I'm so tired today. I slept really poorly last night. I've been working hard today to try to make this day go fast.
I'm not really a cookbook person. I like that old Betty crocker one because it gives you a basic outline of how long and what temps things need to be cooked at. I set it on fire one. But I still have it. I mostly just wing it. Making up things as I go. Sometimes I'll look online for inspiration but even that is usually just to get a basic sense of something. And I just go with my bad self.
Tonight's dinner is taco salad. One of Jeremy's favorites.

I'll see if one of the boys will make something

Well my dinners are going to get sort of interesting from here. About 1.5 months or close to 2 months before stay home orders, dh and I were doing Pescatarian and it was going well. But then I had to stock up and wasn’t sure what stores would be like etc and I just felt it was too much to deal with and went back to meat/regular eating. Dh was fine with it because I cook. Lol. But last week he told me he wants to go back to pescatarian but I am not (I eat less meat but some some -usually for dinner). So sometimes we will eat the same thing (or his without meat) and sometimes I’ll make two things. I did sign up for Marley spoon (thanks to a pea with a promotion code) to get him two vegetarian options per week so I don’t have to come up with stuff and buy ingredients for at least two meals (and he can have the other meal for leftovers for lunches which he likes to do. So after that whole thing, today I’m making him pasta with plant based “meat” crumbles” and we will both have salad and I’ll have some leftover meatloaf. Favorite cookbook? I LOVE reading cookbooks and have quite a few but the funny thing is I mostly use internet recipes I’ve saved to paprika. 😂 But I guess my fav would be a Betty Crocker one I have that looks brand new except for a couple pages of well used recipes with spills all over them. ❤️

Good Morning!!!!
I am thawing chicken breasts for dinner. We are either going to have shish-ka-bobs or just grilled chicken. Depends on how much energy I have later!
Saturday night we got Mexican takeout and ate it on the tailgate of the truck. It was so nice to get out of the house, go for a drive, and eat someone else's cooking!!
I don't really use cookbooks although I have several. I either look something up online or I have a binder of recipes I have collected over the years. Most stuff I make I just wing it.
freecharlie sorry you are not feeling well today.

I think we will have the stuffed peppers I made Saturday for my friend. Her BP has come down some but her dr wants to see her tomorrow. I’m happy he is.
My favorite cookbook is a Slovak recipe one that my Baba’s church put together & sold. Purely sentimental. I do love Martha Stewart cookbooks & magazine. Especially because there’s gardening & home stuff too. I also like Ina Garten and the former Cooking Light. I forget what they’ve changed their name too.
It seems like when I search Pinterest every recipe comes from allrecipes.com. They have so many pop up ads.

I don’t use cookbooks because someone is always on a diet and wants plainer food. It could be me on the diet but not at the moment.
Tonight I suggested spaghetti and meat sauce. To me that sounds good but it could change also.

I have no idea what’s for dinner; it’s 4 pm and nothing is thawed out. AAACK
Off to Pinterest I go!
I purged most of my cookbooks, but still have Martha Stewart, some Cook’s Illustrated magazines from a long ago subscription, Taste of Home, All Recipes and BH&G soft cover impulse buy magazine types from the grocery store check out lane (lots of casseroles and holidays).
