We finally have DS agreeing to try a keto diet for 30 days. We are not doing a super strict keto. We are really looking at added sugars and fake sugars. We are also watching the carbs. He is morbidly obese and has been resistant to other times we asked and offered. Part of the agreement was I would make sure he had meals ready for him to take for lunch. I am totally OK with this if it means he will eat healthier. He does not want meals he has to heat up, would rather just be able to eat it as is. Today he has an anti-pasta salad, boiled egg, almonds and an apple. I can easily find dinner/supper meals that are keto friendly, but I am struggling for lunches that can be packed and taken with. He is not a huge green salad eater, if I make one here he will eat it, but prefers something else.
I want to make sure I have meals he will like and not force him to eat a lot that he does not. He has been doing really good so far and doing some of his own research to find keto friendly drinks. He does drink a lot of water, but gets bored and likes something with flavor. I get that, I get bored with just water also, but cannot stand flavored water.
So if you have any easy lunch ideas for a somewhat reluctant, new to keto person, please share. Thank you.

I made a roll up last night be liked, that would work. I was also thinking something like a Lunchable, but finding something to replace the cracker with. We all enjoy a good meat and cheese tray and it can fill you up. I will check out that group. Thank you.

How about a bento-box of keto snacks? Like a hard boiled egg, a few nuts, jerkey, lunchmeat, some berries, cheese Or Whisps crackers...things like that.

I'm eating a lunch plate right now that includes: -- salami -- cheese -- olives -- baby tomatoes -- cut up zucchini -- hard boiled egg -- black beans
With some ranch dressing in the middle of it to dip. Not strictly keto, but it has no refined carbs or sugar except what's probably in the ranch dressing. This is kind of like a lunchable with extras. lol
Also, if you've been able to find keto-ish dinners then could ds just take leftovers for lunch? There are many dinner things that I think taste good even not reheated -- chicken dishes especially.

Tuna fish is another suggestion. When I bring it to work, I just eat it out of the container w/ a fork. I don't eat it as a sandwich.

I can eat an entire lunch of nothing but cheese, pecans and pork rinds. Really. I can do it almost any day. Go very easy on fruit. He needs to kick his sugar addiction and in some people even fruit can send them on a binge. He needs to get fat adapted and that might take him 14-30 days. After a while, he won't even care about sweets, fruits, sugars, etc. Avocados for me are much like a savory "fruit". Avocado fries with pico and sour cream... I'd cut someone for that.
Look for chaffle recipes. Actually, all you need to learn to make is a chaffle and anything he likes on a sandwich, he can make into a chaffle. We prefer it over bread! It was such a relief for us. We went like 18 months without a sandwich of any kind.
It will be really hard for a couple weeks, he's going to be a complete dick. HOWEVER, since he's a guy, and very overweight, he'll probably really rock it and lose a LOT. Once you get a taste of that loss, you can't stop. If he needs support, let me know. I can chat with him, or hook him up with some good fb groups.

I agree with the chaffle suggestion. There are recipes out there that really mimic the taste of white bread. Then he can have a sandwich and it’ll feel like a “normal” lunch.

If you make him chaffles, really the possibilities are endless. I use almond flour, egg whites and sour cream - no cheese at all - to make chaffles and the taste is completely neutral.
Since you aren't strict keto, Aldi is also now selling 0 carb bread and there are several other stores online where you can buy 0 or low carb bread. There are also many, many, many recipes online for keto biscuits, pizza crust, naan, etc.
Instead of just a plain green salad, add chicken or steak, eggs and nuts.
This week I made zucchini rolls which were fantastic - slice the zucchini really thin and marinate it in some red wine vinegar for a few minutes before you stuff and roll. You can use flavored cream cheese, goat cheese, roasted peppers, turkey or smoked salmon, bacon and sundried tomatoes.
We make roasted jalapenos stuffed with cream cheese quite often and those are easy to reheat.
And I make tortilla chips from lavash bread. He could have those with guacamole or you could make taco salad or loaded nachos.
I've only been doing keto for 10 months so I think a lot of people would still consider me a newbie but what I have learned is that with the ingredients out there today, there really is nothing you can't figure out how to make keto friendly with some substitutions. So think about what he normally likes to eat for lunch and figure out how you can adapt that without the carbs.

They are flat and I drop them in hot water for a minute or so to help them get soft. I have done this before at lunch and only ate half the sandwich. The other half was fine by dinner. Since you aren't strict Keto, there are some really good low carb tortillas. Aldi has my favorites. They are 4 net carbs. You could do a wrap using low carb tortillas. I also like chaffles. I got a small waffle maker from Amazon and it's a perfect substitute for bread. Dash Mini Waffle MakerI have a cracker recipe that I like for low carb crackers. I use different seasonings to change the taste. My family doesn't love them, but I think they are pretty good. They do not come out as crisp as a cracker, but they are still stable enough to use a base for some meat and cheese. Let me know if you want the recipe and I will find it and post.

Also, make mini pizzas out of them and use very little sauce. They do get soggy, so you may want to let him construct his sandwich right before he eats it.

We use a standard square 2 at a time waffle maker. 2 eggs, about .25 - .33 cup of shredded cheese will make 2. My husband likes his really crispy so that usually takes about 10 min, I like mine softer so it's quicker.
You can literally make food that no one has a clue you're keto.

He is not against eating greens, but it is so different from what he has been eating that he kind of turns away from it. I know when I make certain salads he will have one with me. As long as he continues to try we are fully supporting him. We also talked that one day of slipping back does not end everything. You just start over the next day. Tonight we are having sausage crust pizzas. I got personal size pan pizzas so he can totally put on what he wants. My only requirement will be using roma tomato slices instead of sauce. He have had these in the past and he liked them.

He is 22 and totally capable of cooking his own meals. He actually really likes to bake, not a good thing when you are already overweight. We are hoping he will find some keto friendly desserts he likes and try them for us. He makes an awesome creme brulee, and today I found a keto friendly version. I have made it clear I am willing to try any recipe he finds or buy ingredients for anything he wants to make. The more ownership he takes of this the better.
