I can my own tomatoes. So I throw a jar of tomatoes in my blender and liquify it with some salt. Throw into a soup pot with heavy cream, milk, and/or water depending on how creamy I want it, a big handful of basil chiffonade and let it simmer for however long I want. Deliciously fresh tomato soup. I use more than one jar if serving more than my family. Hands down the easiest soup I make.

I will definitely be trying a few of these recipes, starting with annabella 's Pumpkin Soup. I always double the recipe for this carrot soup so I can eat it for lunch for a few days. Carrot Ginger Soup2 Tbsp coconut oil 1 small onion, chopped 5 large carrots, chopped 1 Granny Smith apple, chopped 1 Tbsp fresh ginger, chopped 1/3 C orange juice 1 can coconut milk (I always use light) 2 C chicken or vegetable stock - Saute onion, carrots, apple & ginger in coconut oil until tender.
- Add juice, milk & stock and stir until heated through.
- Carefully, in batches, puree soup in a blender (I use the magic bullet).
- Return the soup to the pot and heat through.
