So we are having a soup and potato luncheon at church to raise money for the youth group next Sunday. I have to bring in 3 different soups.. So I would love your recipes!

1 lb lentil 8-9 cups of stock (vegtable if you are going for vegetarian or vegan)I use beef Large onion chopped couple of cloves of minced garlic small bay leaf couple of carrots chopped into a small dice 1 potato in small dice stalk or two of celery finely chopped. about 1/2 tsp smoked paprika salt and pepper to taste.
Sautee onions, carrots and celery over a low to med heat. Turn down the heat and stir in the paprika and garlic, stir until fragrant.
add remaining ingredients. simmer till lentils are done - usually about an hour. If soup is too thick add more water. If you want it a bit thicker simmer a little longer or puree a bit of it.
You can also add a can of petite diced tomatos as well. I also add a few drops of liquid smoke.
When dd is home I use vegtable stock or water for cooking. After I seperate out hers I add bacon or ham to it and top with some grated parmesan.
This is what we had for dinner tonight.
Some of the ones I always get raved reviews on are: roasted red pepper, potato cheddar soup as well as red beans and rice.
ETA: these all reheat wonderfully. Esp the roasted red pepper soup

Gluten free Chicken Tortilla Soup:
2 chicken breasts cooked or 1 small rotisseri chicken, skin off, cut up 1 sweet or yellow onion, diced 2 garlic cloves, minced 1/2 cup pre cooked white rice 1 can white beans, drained and rinsed 2 jalapeno peppers, seeded, diced 2 tablspoons veg oil 2 tablespoons tomato paste 6-8 cups chicken stock or broth
Heat oil over medium heat. Add in onion, cook till soft and translucent. Add in garlic and pepper. Cook 2 min Add in tomato paste, stir, cook 2 min Pour in chicken stock, stir. Add in beans and chicken. Season with salt and pepper Bring to a boul, then simmer 30 min Check seasoni.g, add s/p if needed Add in rice, cook 5-10 min.
Serve with slices of lime, sliced avacado, and tortilla chips.
Eta: I do 8 cups of stock when I want left overs.

My husband likes a basic beef stock vegetable soup. Until he says "nay", I'll add crab meat to it at the end. I throw this all in a crockpot and let it go. - 1 container of beef stock
- 14 oz can of tomato sauce
- 14 oz can of diced tomatoes
- 1 bag of frozen soup veggies
- a big squeeze of ketchup
- a tablespoon of Worcestershire sauce
- bay leaf
- salt and pepper to taste
- crab meat and crab soup seasoning

Cheesy Vegetable SoupI don't know why it tells you to mash the veggies-- there's really no need. And personally, I'd add a little bit of bacon while the veggies cook (get the precooked stuff, microwave it, snip with your scissors into the soup).

I have a Chicken Tortilla soup that involves almost no chopping. I'll find the recipe.
here it is...
Chicken Tortilla Soup 3 1/2 cups chicken broth 1/2 cup brown rice 1 tsp cumin 2 cups shredded chicken 11 oz can corn or Mexican corn 1 cup picante sauce 1 tbsp chopped cilantro 2 tbsp lime juice 2 corn tortillas coarse salt Vegetable cooking spray
Cook the rice in the broth and cumin for about 40 minutes. Add the chicken, corn, cilantro and lime juice and heat through. Top with tortilla strips and serve.
To to make the tortilla strips, spray the tortillas with the cooking spray or brush them with olive oil. Sprinkle with coarse salt. Cut into strips and bake at 425 degrees for 10 minutes until crispy.
i use brown rice for the fiber and because it doesn't bloat for leftovers. I usually just oven roast a few chicken breasts in olive oil and salt and pepper, but you can certainly use rotisserie chicken. I use Mexican corn, which is a Green Giant brand. But regular corn works just as well. And make extra tortilla strips-- my kids love them!

The favorite in my house is:
Pizza Soup 1 lb Italian sausage, browned, crumbled 1 bag mini-pepperoni 1 carton mushrooms, chopped 1 small onion, finely chopped 1 can pizza sauce 1 can diced tomatoes 1 can macaroni noodles (or whatever kind, and yes, I measure it out by the can...) several cans of water (this depends on my family's mood that night, lol)
In a large pot, brown the Italian sausage, crumbling. Add onions, cook until soft, add the mushrooms, cook until a little softer. And now, everything else into the pot. Sometimes we don't add the pasta, but then I make sure to serve it with breadsticks instead. There are never any leftovers....

Borscht. Cut cabbage carrots, onion beets and the leaves in the pot. Add dill. then 1 litre of chicken stock and 1 litre of beef stock. Cook until veggies are tender. serve with or without a dollop of sour cream and pepper.

This is a favorite, I substitute gluten free pasta. Also, I use more chicken stock than the recipe calls for. Lasagna Soup

Pizza soup
1T olive oil 1 lb Italian sausage 1/2 onion, diced 4 cloves garlic, minced 1t McCormich pizza spice blend (or any blend of Italian spices) 1/2c red wine 1c chicken stalk 1 28oz can Muir Glen crushed fire roasted tomatoes 1 14/5oz can Muir Glen diced tomatoes w/green chiles 1/4-1/2c pepperoni
DIRECTIONS Heat olive oil in a large frying pan. Saute sausage, onions & garlic 5 mins. Add spices, saute 2-3 minutes more. Remove mixture to a slow cooker & deglaze pan w/wine. Simmer about 10 minutes. Add to slow cooker, along w/chicken stalk, tomatoes & pepperoni. Cook as long as you like.

Pumpkin Soup
Ingredients: 4 Macintosh apples - peeled, cored and chopped 1 tablespoon butter 1 onion, finely chopped 2 cloves garlic, crushed 1 tablespoon curry powder 1 teaspoon ground cumin 1 (15 ounce) can pumpkin puree or (better yet fresh) 4 cups vegetable broth
Directions: 1. Melt butter in a large saucepan over medium heat. Add onion, garlic, curry, and cumin; saute, stirring often, until onion is soft and fragrant. 2. Stir in apples, pumpkin, broth, and water. Bring to a boil, stirring often. Cover, and reduce heat to low. Simmer for 25 minutes, stirring occasionally. 3. Puree soup in a blender, be careful it's hot. 4. Return soup to saucepan; reheat, covered, over low heat.
Makes 5 servings

White Chicken Chili! It doesn't get any easier than this! McCormick White Chicken Chili pkt (with reg chili seasoning pkts) 3 cans white beans (NOT drained) Cooked chicken diced (I cook/debone a chicken in the crockpot the night before) I also thin it out a bit with some of the chicken stock I cooked the chicken in. Top with shredded cheddar and sour cream. This is a family favorite!

Last week I made the copy cat Olive Garden Pasta Fagoili soup. It was really good and super easy. If you google it, the recipe will come up. It makes a lot and you can thin it out if you buy a bigger bottle of V-8. I think OG just thins theirs out with water.

Super easy soup that I make almost every week and eat throughout the week for lunch.
About 1.5 lb. cook chicken (I use the fajita chicken that I can buy at Sams and use the whole bag) 1 can cream corn 16 oz. frozen corn 2 cups chicken broth/stock 1 chopped onion (I sometimes us a bag of frozen chopped onion that I can buy at Kroger) 1 can diced tomatoes 1 can (I use a large can) diced chili peppers Cumin (I use about 2-3 tablespoons) Minced Garlic (about 2 spoon fulls)
Simmer (covered) for about 30 minutes or a bit longer
Add 2 cups of milk (I use almond milk)
Continue to simmer (covered) another 20-30 minutes.
It is wonderful like this but even better if you chop up cilantro to add at that end and simmer a few minutes longer.
I also add some hot sauce to the bowl when I eat it. Add this to taste. I love spicy but others might not.

This is my favorite because it's easy and fast. If you're really pressed for time you can get most of the ingredients from the salad bar at the grocery.
1 medium onion, chopped 2 carrots, sliced 2 stalks celery, chopped 1 8oz package mushrooms, sliced spinach
saute veggies in 2 tbsp light oil until tender, about 5 mins. Add 2 14oz cans beef broth, 1 tsp pepper, 4 1/2 cups water and 3/4 cup quick cook barley. Bring to boil then reduce heat and simmer for about 30 mins. During last 5 mins add 2 cups (or more if you like) of chopped, fresh spinach.

If you're not averse to canned stuff, try Trader's Joe's Chicken Tortilla Soup:
Ingredients 1 can Trader Joe's black beans, drained 1 can Trader Joe's corn, drained 1 can Trader Joe's chunk chicken 1 carton Trader Joe's chicken broth 1 jar Trader Joe's Double Roasted Salsa Optional: tortilla chips, cheese, sour cream and/or avocado
Instructions Add all ingredients to a large pot. Bring to a boil and then simmer for 15 minutes. Serve in soup bowls with a dollop of tortilla chips, cheddar cheese, sour cream and/or fresh avocado slices, if desired.
My TJ's carries 2 kinds of canned chicken; get the one in the blue can (NOT the yellow). I skip the beans and add some TJ's canned roasted tomatoes. I also use their frozen roasted corn instead of canned. So it's easy to make substitutions to your taste. You can also get similar ingredients at any store. Super easy to make and my family loves it!

Broccoli Cheese
1 Large Bag Frozen Broccoli (you can use fresh it goes a little brown ) I large box of Low Sodium Chicken broth. Enough water to cover the broccoli
Put in crock pot on high or on stove on simmer, don't boil.
When broccoli is soft enough... ( about 4 hours in crock pot... about 30 mins on stove)
Whizz in blender or with an emersion blender.
When blended and smooth. add one block of cream cheese and two cups of shredded cheddar cheese. simmer until all cheese is melted
Season with Salt, pepper and a dash of nutmeg.
I usually whizz it with the emersion blender again when I am ready to eat it so it is silky smooth.

One of my family's favorite soups...DD calls it "that good soup"
Pasta and bean soup
3 Tbs. olive oil 2 med. onions, chopped 5 cloves garlic, chopped 3 cans navy beans 6 c. vegetable broth 3 cans diced tomatoes 12 oz. pasta shells, cooked 3 Tbs. dried basil 1 1/2 teas. oregano 1 teas. pepper 1 package frozen spinach freshly grated Parmesan cheese
Heat oil. Cook onion and garlic on med. heat until soft. Add all remaining ingredients except cheese. Reduce heat, cover and simmer for 30 minutes. Top each serving with Parmesan cheese just before serving.
I usually make this soup a day ahead to let the flavors go through but it's really good the same day too. Also, you can use the canned tomatoes with onion and garlic rather than doing the onion and garlic fresh...makes it even faster and easier.

Italian sausage links (I prefer hot but you can use either that or mild) 1 medium onion, diced 1 green pepper cut into strips 1 clove garlic minced 28 oz. can petite diced tomatoes 2 cups uncooked bow tie pasta 6 cups water 1 Tbsp. sugar 1 Tbsp. Worcestershire sauce 2 chicken bouillon cubes 1 tsp. thyme 1 tsp. basil 1 tsp. salt * Remove casings from sausages and cut into 1 inch pieces. Brown in stockpot. Remove sausages and all but 2 Tbsp. of drippings. Sauté onions, peppers and garlic in stockpot until tender. Add sausage pieces back into pot along with remaining ingredients. Simmer uncovered about 15-20 minutes until pasta is tender.

Someone brought this chicken gnocchi soup to our soup party last night and it was delicious! I highly recommend it. One of our family favorites is Sausage Tortellini Soup 1 lb Italian sausage links, casings removed 1 small onion, diced 1 green pepper, seeded and diced 2 garlic cloves, minced 1 jar (24 oz) spaghetti sauce of your choice 2 cups chicken broth 1/4 cup grated Parmesan cheese 2 teas Italian seasoning salt and pepper to taste 1 pkg frozen cheese tortellini additional Parm cheese for garnish, is desired In a soup pot, break up the Italian sausages and cook until no longer pink. Add the onion, green pepper and garlic and cook until soft. Stir in the spaghetti sauce, broth, Parm cheese and seasonings. Simmer for about 20 minutes. Add the tortellini and cook until tender, about 5 minutes. Sprinkle each bowl with cheese, if desired.
