So annoyed at myself. I've just been busy and I have made this recipe once before so I didn't review. I was going to smoke a salmon for SIP friends tonight. They are my only "people" who I see and we dine together on Wednesdays. I was going to smoke a salmon, but WTH? It requires a lot of brining and other stuff and will not be ready for tonight, I think as it has only been brining an hour and needs to be ready to be eaten in 4.5 hours. What with making sure white gross stuff doesn't form (UGH!) I really don't have time.
My friend is pregnant and a pescatarian. I have frozen salmon in addition to the fresh brining one. I have tilapia and possibly shrimp. I have some vegetables - broccoli, zucchini and a salad. I have potatoes or rice for sides.
I thought about making a zucchini lasagne, but I do not have ricotta (I have fresh mozarella and cream cheese). I cannot go out as I have too much work to finish before they get here and have to start working at 7am tomorrow. Also, I suck at lasagne.
I really don't have a lot of ingredients at home. Is there something simple I can make (I have about 20 minutes to throw it all together). DANG! I am super annoyed with myself.
Any easy thoughts for me?

My fast go to vegetarian meal is channa masala- if you think she eats Indian food. It's mostly pantry staples (chick peas, onions, spice and rice) so I just always have the stuff and takes 20-30 minutes. You could rub curry and lime on the shrimp and have some shrimp kabobs with it. simple-veganista.com/chana-masala/Or redshoes, DoorDash sounds good too!

Salmon that been brined for a few hours would be awesome baked or grilled. You've got great vegetables to go with it and rice. It sounds like a wonderful dinner!

Salad with shrimp sauted in garlic, mozzarella, and a quick tomato salsa all mixed together. Roast the zucchini and broccoli and poatoes. And pour the wine!

I would do baked tilapia, steamed potatoes, and zucchini casserole (zucchini, onions, drained canned tomatoes sauteed in a skillet topped with mozzarella cheese).

My favorite baked salmon: salt/pepper (or lemon pepper) both sides of the fish, brush with mayonnaise, coat with very finely chopped pecans or walnuts. I know the mayonnaise sounds weird but it doesn't taste like mayonnaise when the fish is cooked. It just has a yummy nutty crust. it's sooooooo good and easy and no white froth/slime! Maybe since the fish is brined, skip the salt.

Just remember not to add salt.

I’ve never brined salmon before. I agree with baking or roasting it. In fact I’d cut it into portions and do a single-pan meal with the salmon and cut vegetables all seasoned together, and make your rice or whatever on the side.

With what you’ve got going on today, and the fact that you eat together every Wednesday and you don’t necessarily need to be impressive, I would order a pizza. Seriously. It’s about the company, right? I would hate to be so rushed making something.

My nieces husband is a chef, and he once made lasagna for dinner and told me about bechamel sauce. It is so good, and I have never used ricotta again.

Ricotta in lasagna is an American thing. Bleuch! I respectfully disagree. My Italian grandmother was from Rome.. She NEVER used a bechamel sauce with her lasagna. She always used her homemade red sauce and ricotta. Not a lot ricotta but just enough along with mozzarella.

I think I'd just bake the salmon, roast some of the vegetables, make rice, done. If you all eat together every week then to me that says you're good friends, and good friends are most likely happy with whatever you offer. And probably glad to have the night off from cooking.
