As I have 2 apple pies in the oven, I feel the need to talk apple pie.
What type of apples do you use?
Do you serve it hot or cold?
With whipped cream, ice cream or cheese?

Granny Smith or another tart cooking apple
hot
usually real vanilla ice cream because that's how DH prefers it (and since it's his favourite dessert...) - I like it best with custard

I like hot apple pie with vanilla ice cream. I however am not talented in the pie baking area so I can't answer the kind of apple question. If you have any leftovers you can send me some.

I like it cold, but my husband likes it warm. He likes his with vanilla ice cream, and I like whipped cream with mine.

I use a mix of apples and bake it in a shortbread crust. I bake apple pies, but I don't eat them.

I prefer Granny Smith for pies although you couldn't pay me to eat a raw one to tart for me. Warm, with vanilla ice cream. Oh and the pie has to have cinnamon. Jen

I like a mixture of honey crisp and granny smith apples. Probably about 70% honey crisp and 30% granny smith. I like the balance of tart and sweet. I always serve my apple pie's warm with Vanilla ice cream, though my DH has been known to eat slices cold straight from the fridge

i don't usually eat apple pie but if I do I like it warm with a little bit of vanilla ice cream.

I prefer to use Northern Spies but any apple will do in a pinch. I like it both warm or cold. Although I like it best warm with some hot brown sugar sauce poured over it and a dollop of vanilla ice cream to top it all.

In a perfect world Pippen apples, but I can't ever find them any more. They are my favorite eating apples too. Usually I make apple pie when I have apples that are starting to go soft and then I use what I have on hand, Granny Smith or Gala. I also have a crank apple peeler that I love. If I had to peel apples by hand I'd never make apple pie.

Hmmm. Must be a regional thing...I've seen it like this: But only in pictures. No one that I know of here in Oregon eats cheese with pie either on top or on the side. Still sounds kinda good though.

Last time I made an apple pie, I think I cut the chunks too small...I ended up with applesauce in a pie shell. I thought it was perhaps a sign that apple pie should be left to the Publix bakery elves and haven't tried again.

I like to use the greenest Golden Delicious apples I can find for my pies. They have a nice apple flavor but retain their shape when baked. I test my pie with a fork, looking for the perfect "doneness" of the apples, before removing from the oven as I don't want the apple slices even a little hard nor do I want them mushy like applesauce. As far as the apple filling goes, I just use sliced apples, sugar, flour (for thickening), lots of cinnamon, a tiny dash of nutmeg, salt, and I put 2 or 3 pats of butter on top of the filling before covering with the top crust. I also sprinkle the top of the pie with a cinnamon-sugar topping before baking. Served hot with french vanilla ice cream. Yum. Apple pie will be on our Thanksgiving menu along with pumpkin, lemon meringue, pecan, and cheese cake. Lots of family staying through the weekend. Good food, good company.

The apples I would choose to use to make apple pie are Bramley cooking apples. But seeing as I can't get them here, I use Macintosh. And no cinammon. Not even a teeny bit. Just apples and a bit of sugar. I use a short crust pastry.
And it has to be hot.
I like it with pouring cream - light or heavy. DH likes custard. DD likes ice cream. DS would have all 3 with his pie, as long as there is NO CINNAMON lol.

Funny, my grandfather used to eat his with cheese and he would always say it as A pie without cheese is like a kiss without a squeeze..small worlds
I use a mix, prefer warm with ice cream but I am known to stand over a cold pie in the tin with a fork and a cup of coffee first thing in the am.

I just bought some honey cinnamon vanilla ice cream to use on an apple pie for Thanksgiving. Sounds so good!

Granny Smith, Spy, McIntosh, really any tart apple works great. BIG fan of the Pillsbury refrigerated pie crusts and my Pampered Chef apple peeler/corer/slicer. Takes the work out of pie making. I prefer my pie room temperature - no ice cream or whipped cream. Love sharp cheese served with it, but it's not a necessity.
