I do something similar. I remove the outer leaves. Then I make 2 slices starting close to the core and up so the lettuce is cut into fourths. Then I slice across. If it is larger, I will cut it one additional time before slicing. I have also pulled the leaves off, soaked in lemon water in my salad spinner, dried, then stack like leaves and make long cuts then slices across. I like to use that method for tacos so I get ribbon cuts.
